Description
An easy family-friendly casserole made with a buttery biscuit crust, seasoned ground beef, fire-roasted tomatoes, green chiles and a creamy cheesy topping.

- 12 oz package Pillsbury biscuits
- 16 oz lean ground beef
- 1 cup diced onion
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp chili powder
- 1 tsp cumin
- 1/4 tsp dried oregano
- 1 (14.5 oz) can fire roasted tomatoes
- 1 (4 oz) can diced green chiles
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup Greek yogurt
- 1 1/2 cups shredded cheddar cheese
Instructions
- Heat oven to 375° F. Spray a 9×13 inch pan with non stick cooking spray. Open the biscuits and press them into the bottom of the pan to make a crust. Bake for 10 minutes. Set aside.
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, onion powder, chili powder, cumin and oregano. Stir in the tomatoes and green chiles and bring to a simmer. Pour the mixture over the biscuits.
- In a bowl whisk together the mayo, sour cream and yogurt. Drop it by dollops over the top of the meat mixture. Sprinkle the cheddar on top.
- Bake for 30 minutes.
- Let it sit for 5 minutes before slicing and serving.
