Description

An easy family-friendly casserole made with a buttery biscuit crust, seasoned ground beef, fire-roasted tomatoes, green chiles and a creamy cheesy topping. 


Ingredients

  • 12 oz package Pillsbury biscuits
  • 16 oz lean ground beef
  • 1 cup diced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp dried oregano
  • 1 (14.5 oz) can fire roasted tomatoes
  • 1 (4 oz) can diced green chiles
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup Greek yogurt
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Heat oven to 375° F. Spray a 9×13 inch pan with non stick cooking spray. Open the biscuits and press them into the bottom of the pan to make a crust. Bake for 10 minutes. Set aside.
  2. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, onion powder, chili powder, cumin and oregano. Stir in the tomatoes and green chiles and bring to a simmer. Pour the mixture over the biscuits. 
  3. In a bowl whisk together the mayo, sour cream and yogurt. Drop it by dollops over the top of the meat mixture. Sprinkle the cheddar on top. 
  4. Bake for 30 minutes. 
  5. Let it sit for 5 minutes before slicing and serving.
