Cheddar Bay Ground Beef Casserole–an easy beef cobbler made with seasoned ground beef, mixed vegetables, a creamy sauce, cheese and Cheddar Bay biscuit topping baked until golden.

Cheddar Bay Ground Beef Casserole
This is a delicious beef pot pie casserole. The recipe calls for easy ingredients and you’ll just need to pick up the Red Lobster biscuit mix at the grocery store. I found it in the baking aisle. I only used half the mix so I can make this dinner another time. If you want, double this recipe and use the whole box of mix. The Red Lobster biscuit mix creates a golden, buttery topping. Don’t skip the final step of brushing the seasoning butter on top, it adds lots of flavor!
Ingredients/Substitution Ideas
- Ground beef–or ground turkey
- Onion–or shallot
- Black pepper
- Garlic powder
- Dried parsley
- Kosher salt
- Cream of chicken soup–or cream of mushroom soup
- Chicken broth–or water and Better Than Bouillon chicken base
- Frozen mixed vegetables–or frozen peas and carrots
- Milk–or half-and-half for a richer topping
- Red Lobster Cheddar Bay Biscuit Mix–or any cheddar biscuit mix
- Shredded Monterey Jack cheese–or cheddar or Colby-Jack
- Butter
Steps
Heat oven to 400° F. Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the pepper, garlic powder, parsley, salt, cream of chicken, chicken broth and mixed vegetables.


Pour the mixture into a 9×9 inch baking dish.
Sprinkle ½ cup of the cheese over the top.

In a mixing bowl whisk half of the package of biscuit mix (save seasoning packet for later), the remaining ¼ cup and the milk together. Pour the batter over the top of the beef mixture.


Bake for 40 minutes, until top is golden brown. Stir the melted butter together with the seasoning packet and brush it over the top. Let sit for 5 minutes and then serve.

Notes/Tips
- Serve with a green salad or some steamed broccoli.
- For the fluffiest biscuit topping, don’t overmix the batter, stir just until combined.
- Leftovers store well in the refrigerator for up to 3 days. Reheat individual portions in the microwave or warm the whole dish in the oven. To freeze: let it cool completely, then wrap tightly in plastic wrap and aluminum foil. Freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.
