Toby Keith Casserole–a quick Instant Pot meal (or side dish) made with creamy mushroom rice, sautéed onions, bacon, and tender broccoli.

Toby Keith Casserole

Today’s recipe is a fast and easy rice and broccoli dinner. You can serve this as a main dish (try adding in chicken) or as a side dish. It’s pretty fast to make so it’s perfect for a busy night when you don’t have time or energy. I love using frozen chopped onions so I don’t even have to chop one thing! This recipe is adapted from Toby Keith’s Broccoli Rice Casserole Recipe on Family Cookbook Project.

Ingredients/Substitution Ideas

  • Olive oil–or canola oil
  • Onion
  • Chicken broth–or water and Better than Bouillon chicken base
  • Converted rice–or long grain white rice or brown rice (change cooking time to 22 minutes with a 10 minute natural pressure release)
  • Cream of mushroom soup–or cream of chicken, celery, cheddar
  • Frozen broccoli florets
  • Bacon crumbles–or fry up 6 slices of bacon and crumble

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute for 4 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rice. Dump soup on top, don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes when time is up let pot sit for 8-10 minutes and then move valve to venting and remove the lid. 

Cook broccoli according to package directions (I used my microwave). Stir the broccoli and bacon into the pot. 

Serve and enjoy!

Notes/Tips

  • Serve with cucumber salad.
  • To add chicken into this recipe: use cooked, shredded or diced chicken and stir in 1 to 2 cups of cooked chicken at the same time as the broccoli and bacon. You can also cut up raw chicken into bite size pieces and lay it on top of the rice. It will cook in the 5 minute pressure cooking time as long as it is cut into pieces.
  • This recipe can be gluten free if you use gluten free cream of mushroom soup.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 1 Tbsp olive oil
  • 3/4 cup diced onion
  • 1 1/8 cup chicken broth
  • 3/4 cup converted rice
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (12 oz) bag frozen broccoli florets
  • 1/2 cup bacon crumbles

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute for 4 minutes.
