Description

A quick Instant Pot meal (or side dish) made with creamy mushroom rice, sautéed onions, bacon, and tender broccoli.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 3/4 cup diced onion
  • 1 1/8 cup chicken broth
  • 3/4 cup converted rice
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (12 oz) bag frozen broccoli florets
  • 1/2 cup bacon crumbles

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute for 4 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice. Dump soup on top, don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes when time is up let pot sit for 8-10 minutes and then move valve to venting and remove the lid. 
  5. Cook broccoli according to package directions (I used my microwave). Stir the broccoli and bacon into the pot. 
  6. Serve and enjoy!
