Description
A quick Instant Pot meal (or side dish) made with creamy mushroom rice, sautéed onions, bacon, and tender broccoli.
Ingredients

- 1 Tbsp olive oil
- 3/4 cup diced onion
- 1 1/8 cup chicken broth
- 3/4 cup converted rice
- 1 (10.5 oz) can cream of mushroom soup
- 1 (12 oz) bag frozen broccoli florets
- 1/2 cup bacon crumbles
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute for 4 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Dump soup on top, don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes when time is up let pot sit for 8-10 minutes and then move valve to venting and remove the lid.
- Cook broccoli according to package directions (I used my microwave). Stir the broccoli and bacon into the pot.
