Description

An old fashioned meat and potatoes casserole that’s been updated for cooking in your Instant Pot. 


Ingredients

Scale
  • 1 1/2 pounds red potatoes, sliced into quarter inch rounds
  • 1/2 pound lean ground beef
  • 1 Tbsp dry minced onion
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 Tbsp flour
  • 1 1/4 cups milk
  • 1 cup shredded sharp cheddar cheese
  • 1 green onion, sliced

Instructions

  1. Pour 1 ½ cups water into bottom of Instant Pot. Place potatoes into a steamer basket and drop the basket into the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up, let pot sit for 5 minutes and then move valve to venting. Remove the lid. Remove steamer basket and set aside. Discard water in the pot. 
  2. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper, garlic powder and flour. 
  3. Slowly stir in the milk and let it thicken. Once it has thickened turn off the pot.
  4. Stir in the cheese and let it melt. Fold in the green onions and potatoes.
  5. Salt and pepper to taste. Serve and enjoy!
