Throw Together Casserole

This recipe is a quick and easy Instant Pot chicken pasta bake that you can throw together with marinara, parmesan, and a crispy panko topping. It really comes together so quickly. I love me a good dump and go recipe and this fit the bill for a busy weeknight. The crispy panko topping just gave the dish the perfect finish! Enjoy!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Penne pasta–or another short cut pasta like bowtie pasta
  • Marinara sauce–I used Mezzetta brand
  • Chopped cooked chicken–I used rotisserie
  • Kosher salt
  • Black pepper
  • Italian seasoning
  • Garlic powder
  • Parmesan cheese–or mozzarella cheese
  • Panko breadcrumbs
  • Non-stick cooking spray–or melted butter

Steps

Pour broth into Instant Pot. Sprinkle in the pasta.

Dump the marinara over the pasta. Add chicken, salt, pepper, Italian seasoning and garlic powder into the pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir.

Sprinkle the parmesan cheese on top. Sprinkle the panko on top. Lightly spray the panko with non-stick cooking spray. 

If you have an air fryer lid place it on top and air fry at 400° F for 3 minutes. If you don’t have an air fryer lid place the Instant Pot liner under your oven’s broiler for a couple minutes until the panko browns up. 

Serve and enjoy!

Notes/Tips

  • Serve with a green salad and garlic bread.
  • Can I use raw chicken instead of cooked chicken? Yes. Cut 1 pound of boneless skinless thighs or breasts into ½ inch cubes. Add them into the pot when you would have added the cooked chicken.
  • I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

A fast, dump and go Instant Pot penne pasta recipe with chicken parm vibes.


Ingredients

Scale
  • 2 cups chicken broth
  • 8 ounces penne pasta
  • 1 (24.5 oz) jar marinara sauce
  • 1 1/2 to 2 cups chopped cooked chicken (I used rotisserie)
  • 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp italian seasoning
  • 1 tsp garlic powder
  • 1/2 cup shredded parmesan cheese
  • 1/2 cup panko breadcrumbs
  • non-stick cooking spray
