Tennessee Pride Country Kitchen Casserole

This breakfast casserole is seriously so good! Greg said, “This is the best breakfast casserole I’ve ever had!” Both Skyler and Greg were completely surprised when I told them the base of the recipe was croutons. Kind of different, right? But it really turned out well! I love that you can make and bake right away or throw it together the night before and refrigerate until you’re ready to bake the next day. This would be a perfect casserole for holidays or weekend brunches. (Recipe adapted from Family Cookbook Project).

Ingredients/Substitution Ideas

  • Ground Sausage
  • Diced Onion
  • Herb-Seasoned Croutons
  • Shredded Pepper Jack Cheese
  • Shredded Cheddar Cheese
  • Eggs
  • Half and Half
  • Dry Mustard
  • Salt and Pepper
  • Pimientos–or diced roasted red peppers

Steps

Heat oven to 350° F. 

Heat a pan over medium high heat. Add in the sausage and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease.

Spray a 9×9 inch baking dish with non stick cooking spray. Spread the croutons into the bottom of the pan. Cover croutons with pepper jack and cheddar. Sprinkle the cooked sausage over the cheeses.

In a bowl whisk together the eggs, half and half, mustard, salt, pepper and pimientos. Pour the mixture over the sausage. 

Bake for 45-50 minutes, until eggs are set.

Let sit for 5 minutes. Slice and serve.

Notes/Tips

  • Serve with fresh fruit. If serving for dinner serve alongside a green salad.
  • Add chopped green chiles, diced bell peppers, spinach or mushrooms for more veggies.
  • Try different crouton flavors (garlic butter, Texas toast, Italian herb) for a fun twist.
  • For a little spice, add a pinch of red pepper flakes or use hot sausage.
  • You can make this the night before. Assemble, cover, refrigerate and bake in the morning (add 5–10 minutes to bake time).
  • Double this recipe by double everything and bake in a 9×13 for about 45–60 minutes.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 16 oz ground sausage

Slow Cooker: Assemble in a greased slow cooker and cook on low for 3–4 hours, or until set.
