Supercharged Casserole

Superfoods like kale, sweet potatoes, lentils, cauliflower and turmeric combined in an easy and FAST Instant Pot meal with lots of flavor. 


  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 2 large garlic cloves, minced
  • 1/2 tsp ground ginger
  • 3/4 tsp turmeric
  • 3/4 tsp cumin
  • Pinch of smoked paprika
  • 1/4 tsp coriander
  • 1 cup water
  • 1 teaspoon Better than Bouillon vegetable base
  • 1 Tbsp tomato paste
  • 1/4 cup red lentils
  • 1 heaping cup of cubed sweet potatoes (1/2 inch cubes)
  • 1 large kale leaf, stem removed and chopped
  • 1 (12 oz) bag frozen cauliflower rice
  • 1 tsp kosher salt
  • 1/2 tsp black pepper


  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onion and saute for 3 minutes. Add in the garlic, ginger, turmeric, cumin, paprika, coriander and saute for 30 seconds.
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the bouillon and tomato paste. Turn off Instant Pot.
  3. Dump in the lentils, sweet potatoes, kale and cauliflower rice (in that order). Don’t stir. Sprinkle in the salt and pepper.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid.
  5. Stir. Scoop onto plates and enjoy!
