Description
Superfoods like kale, sweet potatoes, lentils, cauliflower and turmeric combined in an easy and FAST Instant Pot meal with lots of flavor.
Ingredients

- 1 Tbsp olive oil
- 1 cup diced onion
- 2 large garlic cloves, minced
- 1/2 tsp ground ginger
- 3/4 tsp turmeric
- 3/4 tsp cumin
- Pinch of smoked paprika
- 1/4 tsp coriander
- 1 cup water
- 1 teaspoon Better than Bouillon vegetable base
- 1 Tbsp tomato paste
- 1/4 cup red lentils
- 1 heaping cup of cubed sweet potatoes (1/2 inch cubes)
- 1 large kale leaf, stem removed and chopped
- 1 (12 oz) bag frozen cauliflower rice
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onion and saute for 3 minutes. Add in the garlic, ginger, turmeric, cumin, paprika, coriander and saute for 30 seconds.
- Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the bouillon and tomato paste. Turn off Instant Pot.
- Dump in the lentils, sweet potatoes, kale and cauliflower rice (in that order). Don’t stir. Sprinkle in the salt and pepper.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid.
- Stir. Scoop onto plates and enjoy!
