Description

Sliced potatoes and cubes of ham in a creamy parmesan sauce made fast with your Instant Pot!


Ingredients

Scale
  • 1 1/2 pounds red potatoes, sliced into quarter inch rounds
  • 2 Tbsp butter
  • 1/4 cup minced shallot
  • 1 Tbsp minced garlic
  • 1 Tbsp flour
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 Tbsp chives
  • 8 ounces ham cubes
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Pour 1 ½ cups water into bottom of Instant Pot. Scatter potatoes into a steamer basket (try not to stack directly on top of each other). Place the steamer basket into the Instant Pot.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.
  3. Move steamer basket out of the pot and set aside. Discard the water and dry out the pot.
  4. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the shallot and saute until softened, about 3 minutes. Stir in the garlic.
  5. Sprinkle in the flour and whisk it in. Very slowly whisk in the cream and milk, stirring as you go. Stir in the salt, pepper, chives and ham. Once the sauce has thickened turn off Instant Pot.
  6. Stir in the parmesan cheese. Fold in the potatoes. 
  7. Salt and pepper to taste. Serve and enjoy!
