With this simple step-by-step assembly-style guide you’ll be able to make 7 crockpot freezer meals in one hour (I did it in 55 minutes!). The recipes that are included in this guide are some of the most popular dinner recipes I have: cheesy broccoli and chicken casserole, taco casserole, beef stew, crockpot roast, french onion stroganoff, garlic lime chicken and enchilada soup. If you have the freezer space you can double each recipe and have 14 meals ready to go in not much more than an hour.

The idea is that you spend a chunk of time (only an hour plus grocery shopping) putting together some crockpot freezer meals and then on the busy days that you need them you pop one into the slow cooker in the morning and it’ll be ready at dinner time.
Can I just tell you how much I love these meals? I am so extremely happy with myself when I have them in my freezer. It makes life much easier. We loved all these meals and I think you will too. If you’re not sure if you’ll like them let me tell you exactly what’s in them…
1. Chicken Broccoli Casserole
Ingredients you’ll need:
1 cup minute brown rice
2 cups chicken broth
1 tsp minced garlic
1/2 tsp kosher salt
1/4 tsp black pepper
1 (13.75 oz) can cream of chicken soup
1 lb boneless, skinless chicken breasts
12 oz frozen broccoli florets
Salt and pepper
2. Beef Stew
Ingredients you’ll need:
1 lb beef stew meat or 1 lb roast cut into small, bite-size pieces
2 carrots, finely chopped
2-3 potatoes, cubed
3 celery stalks, finely sliced
2 T dehydrated onion or 1/2 cup chopped onion
1 tsp salt
1 tsp sugar
2/3 cup water
1 (10 3/4 oz) can of tomato soup
2 T dry tapioca
3. Garlic Lime Chicken
Ingredients you’ll need:
2 lbs of boneless, skinless chicken thighs (or you can use 6 bone-in chicken thighs, skin removed)
1/2 cup soy sauce
1/4 cup fresh lime juice
1 Tbsp Worcestershire sauce
2 garlic cloves, minced
1/2 tsp dry mustard
1/2 tsp ground pepper
1 Tbsp minute tapioca
2 lbs of boneless, skinless chicken thighs (or you can use 6 bone-in chicken thighs, skin removed)
1/2 cup soy sauce
1/4 cup fresh lime juice
1 Tbsp Worcestershire sauce
2 garlic cloves, minced
1/2 tsp dry mustard
1/2 tsp ground pepper
1 Tbsp minute tapioca
4. Chicken Enchilada Soup
Ingredients you’ll need:
1 cup chicken broth
1 (15 oz) can black beans
1 (15 oz) can corn
1 (4 oz) can diced green chiles
1 (10 oz) can enchilada sauce
1 (14.5 oz) can petite diced tomatoes
1 tsp cumin
1 lb boneless, skinless chicken thighs or breasts
1 (16 oz) can refried beans
Salt and pepper
Optional toppings: sour cream, chopped cilantro, sliced avocado, grated cheddar, tortilla or corn chips
1 cup chicken broth
1 (15 oz) can black beans
1 (15 oz) can corn
1 (4 oz) can diced green chiles
1 (10 oz) can enchilada sauce
1 (14.5 oz) can petite diced tomatoes
1 tsp cumin
1 lb boneless, skinless chicken thighs or breasts
1 (16 oz) can refried beans
Salt and pepper
Optional toppings: sour cream, chopped cilantro, sliced avocado, grated cheddar, tortilla or corn chips
5. French Onion Beef Stroganoff
Ingredients you’ll need:
2 medium yellow onions
1 tsp sugar
1 lb mushrooms
2 lbs beef stew meat or 2 lbs of chuck roast
1 packet onion soup mix
1 cup water
1 1/2 cups sour cream
1 Tbsp flour
Hot cooked egg noodles
6. Taco Casserole
Ingredients you’ll need:
1 lb ground beef or ground turkey
2 Tbsp taco seasoning
1 (13.75 oz) can cream of chicken soup
1 (10.5 oz) can rotel tomatoes
1 (14 oz) can black beans
1 cup frozen corn
1 1/2 cups shredded cheese
Toppings: tortilla chips, sour cream, cilantro, avocado
7. Crockpot 3-Envelope Roast
Ingredients you’ll need:
3 lbs chuck roast
3 Tbsp ranch dressing mix
2 Tbsp gravy mix
2 Tbsp Italian dressing mix
2 cups water

I love this plan! I made the stroganoff and taco casserole already, and I’ve got 5 more bags in the freezer! I thought the stroganoff sauce was a little bit thin, so next time I’ll double the flour. But the flavor was good! The taco casserole was a hit! Can’t wait to cook up my other meals! Such a time saver! Also, I did 90% of my shopping at Aldi, and I think I spent about $85 to make all of these meals!
