She’s Gone Casserole–seasoned ground beef, tender potatoes, sweet corn, and sharp cheddar cheese with a smoky barbecue twist, all made easy in the Instant Pot or slow cooker.

She’s Gone Casserole

When mom is out of town this recipe is an easy man meal with just a few ingredients. It’s hearty, cheesy, and packed with bold flavor. There aren’t any fancy ingredients or complicated steps. Meat, potatoes, bbq sauce and cheddar are the main ingredients and they go together so well. Greg and Skyler loved this dinner soooo much.

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7. You can also use ground turkey.
  • Onion–yellow or white
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • Beef broth–or water and Better than Bouillon
  • Russet potatoes–or yukon gold, red
  • Barbecue sauce–I used Sweet Baby Ray’s
  • Frozen sweet corn–or frozen green beans
  • Sharp cheddar cheese–or colby jack

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in HALF of the the salt, pepper, garlic powder and smoked paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Lay the potatoes on top, try not to stack any of the potatoes directly on top of each other. Sprinkle the potatoes with the other half of the seasonings.

Dump in the barbecue sauce and corn.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir in the cheese. Serve and enjoy!

Notes/Tips

  • Serve with coleslaw, roasted green beans or a green salad.
  • This recipe can be gluten free if you use gluten-free bbq sauce.
  • Try to slice the potatoes about ¼ inch thick and as evenly as possible so they all cook at the same rate and stay tender without turning to mush.
  • Splitting the seasonings between the beef and the potatoes gives better flavor all the way through the dish.
  • When you add the cheese at the end, stir gently so you don’t break up the potatoes too much.
  • Since barbecue sauce is a main flavor, pick one you really like.
  • After you stir in the cheese, letting it sit for 5 minutes helps everything thicken up and makes it even better.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 cup diced onions
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • Dash of smoked paprika
  • 1/2 cup beef broth
  • 1 pound Russet potatoes, peeled and sliced into quarter inch rounds
  • 1/2 cup of barbecue sauce
  • 1/2 cup frozen sweet corn
  • 1/2 cup shredded sharp cheddar cheese

Instructions

  6. Gently stir in the cheese. Serve and enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in HALF of the the salt, pepper, garlic powder and smoked paprika. Transfer to the slow cooker.
  2. Stir in the broth, potatoes, barbecue sauce and corn. Sprinkle in the remaining seasonings. 
  3. Cover and cook on low for 3-4 hours, or until potatoes are tender.
  4. Gently stir in the cheese. Serve and enjoy!

    This was yummy good! I used ground turkey breast instead of beef, added a few more potatoes and increased the corn to a full cup. I served it with a green salad full of fresh veggies. As my husband was ready to squeeze out his bleu cheese salad dressing, he absent-mindedly added it to the top of the casserole rather than his salad! He saw his mistake instantly but loved the combination. In fact, he added it to the leftovers the next day too!

    Faaaantastic!!! My whole family loved this! So glad I doubled the recipe so we can have it as leftovers tonight 🙂 I made it in the crockpot. Only change was that I added mushrooms, and used a different BBQ sauce. Definitely on the make this regular list! Thank you Karen!

    When this recipe was in my “in box” today I had all the ingredients on hand, so our young adult Grandson that lives with us to attend university made it for dinner tonight!

    With very few ingredients, it is quick and easy to make…and really delicious 😋

        The recipe calls for SLICED 1/4-inch into quarter inch rounds, not cubed.
