Tennessee Hobo Casserole–an easy and delicious meat and potatoes Instant Pot or slow cooker recipe.

Tennessee Hobo Casserole
This simple Instant Pot dinner of ground beef, potatoes, carrots and seasonings is similar to a hobo dinner you might cook over a campfire. My version takes only a 2 minute pressure cooking time though! And with the addition of 2 types of cheese it has lots of flavor and a bit of creaminess. This type of dinner always goes over well at my house and there are never leftovers. Enjoy!
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion
- Italian seasoning
- Kosher salt
- Black pepper
- Smoked paprika
- Beef broth–or water and Better than Bouillon beef base
- Red potatoes–or peeled russet potatoes, yukon gold potatoes
- Carrots–or baby carrots
- Sharp or medium cheddar cheese
- Parmesan cheese
- Ketchup
Steps
Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onions. Brown for 5 minutes, drain off excess grease. Stir in HALF of the italian seasoning, salt, pepper and paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add in the carrots and potatoes, being careful not to stack them on top of each other. Sprinkle the other half of the seasonings on top of the potatoes.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.

Stir in the cheddar, parmesan and ketchup.

Serve and enjoy!

Notes/Tips
- Serve with dinner rolls, corn on the cob and garlic roasted green beans.
- Why is there ketchup in this? It adds a slight tangy sweetness and depth of flavor, but you can leave it out if you prefer.
- Can I add other vegetables? Yes, try mushrooms or green beans.
- What if I don’t like cooked carrots? Just leave them out! It’ll still be great without the carrots.
- This recipe is gluten free.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. This recipe can easily be doubled to feed a crowd. If you double it use a 1 minute pressure cook time instead of 2 minutes.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Slow Cooker Instructions:
- Brown the ground beef in a skillet over medium heat. Add the diced onions and cook until softened. Drain excess grease. Stir in half of the Italian seasoning, salt, pepper, and smoked paprika.
- Transfer the beef mixture to the slow cooker and stir in the broth, potatoes, carrots and remaining seasonings.
- Cover and cook on LOW for 4 hours or HIGH for 2-3 hours, until the potatoes and carrots are tender.
- Stir in the cheddar, parmesan, and ketchup until well combined. Cover for another 5-10 minutes to let the cheese melt. Serve and enjoy!

If I double it in the slow cooker would the cook time on low increase any?
Maybe by a half hour…not too big of a difference
This recipe was so easy and delicious. Minimal prep and it was done in 2 minutes in my pressure cooker. My kids and husband all gobbled it up. Definitely a keeper!
