Description
Seasoned ground beef, tender potatoes, sweet corn, and sharp cheddar cheese with a smoky barbecue twist, all made easy in the Instant Pot or slow cooker.
Ingredients

- 1 pound lean ground beef
- 1/2 cup diced onions
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- Dash of smoked paprika
- 1/2 cup beef broth
- 1 pound Russet potatoes, peeled and sliced into quarter inch rounds
- 1/2 cup of barbecue sauce
- 1/2 cup frozen sweet corn
- 1/2 cup shredded sharp cheddar cheese
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in HALF of the the salt, pepper, garlic powder and smoked paprika.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Lay the potatoes on top, try not to stack any of the potatoes directly on top of each other. Sprinkle the potatoes with the other half of the seasonings.
- Dump in the barbecue sauce and corn.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Gently stir in the cheese. Serve and enjoy!
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in HALF of the the salt, pepper, garlic powder and smoked paprika. Transfer to the slow cooker.
- Stir in the broth, potatoes, barbecue sauce and corn. Sprinkle in the remaining seasonings.
- Cover and cook on low for 3-4 hours, or until potatoes are tender.
- Gently stir in the cheese. Serve and enjoy!
