Description

Seasoned ground beef, tender potatoes, sweet corn, and sharp cheddar cheese with a smoky barbecue twist, all made easy in the Instant Pot or slow cooker.


Ingredients

  • 1 pound lean ground beef
  • 1/2 cup diced onions
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • Dash of smoked paprika
  • 1/2 cup beef broth
  • 1 pound Russet potatoes, peeled and sliced into quarter inch rounds
  • 1/2 cup of barbecue sauce
  • 1/2 cup frozen sweet corn
  • 1/2 cup shredded sharp cheddar cheese

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in HALF of the the salt, pepper, garlic powder and smoked paprika.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Lay the potatoes on top, try not to stack any of the potatoes directly on top of each other. Sprinkle the potatoes with the other half of the seasonings.
  4. Dump in the barbecue sauce and corn.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. Gently stir in the cheese. Serve and enjoy!

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in HALF of the the salt, pepper, garlic powder and smoked paprika. Transfer to the slow cooker.
  2. Stir in the broth, potatoes, barbecue sauce and corn. Sprinkle in the remaining seasonings. 
  3. Cover and cook on low for 3-4 hours, or until potatoes are tender.
  4. Gently stir in the cheese. Serve and enjoy!
