Right On Dinner

Right On Dinner is an easy one pot meal. It’s like a cheeseburger in a bowl! A fast and easy weeknight meal. 


  • 1 pound lean ground beef
  • 1 shallot, diced
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup mayonnaise
  • 1 Tbsp yellow mustard
  • 1 tsp red wine vinegar
  • 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 Tbsp ketchup
  • 1 tsp pickle juice
  • 1/4 cup diced dill pickles
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1 head of romaine lettuce, shredded


  1. Turn Instant Pot to saute setting (“more”) or heat a pan on the stove over medium high heat. Add in the beef and break it up. Add in the shallot, salt and pepper. Brown the beef until cooked through. Turn heat off. 
  2. In a bowl whisk together the mayonnaise, mustard, vinegar, paprika, garlic powder, onion powder, ketchup and pickle juice. 
  3. Stir the sauce into the meat. Stir in the pickles, tomatoes and cheese. 
  4. Spoon a scoop of the meat mixture into a bowl and top with a big handful of lettuce. Eat and enjoy!
