Rich Uncle Chicken–creamy rice and chicken that is super simple to make in your Instant Pot but tastes so rich!

Instant Pot Risotto with Chicken

Rich Uncle Chicken

This rich and creamy risotto and chicken recipe comes from my Uncle Gene. I changed up the recipe to make it in the Instant Pot instead of slaving over the stove constantly stirring for 30 minutes. With just a few simple ingredients you can be enjoy this hands off, easy dinner tonight! This tastes great with roasted broccoli or asparagus.

Ingredients/Substitution Ideas

  • Butter
  • Onion–or a shallot
  • Arborio rice–I buy in the bulk section at Winco
  • Chicken broth–or water and Better than Bouillon chicken base
  • Cooked chopped chicken–or 16 ounces raw chicken thighs cut into cubes
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Parmesan cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in 2 Tbsp of the butter and let it melt. Add in the onion and saute for 5 minutes.

Stir in the rice and toast for 30 seconds.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. Add in the chicken, salt, pepper, garlic powder and remaining tablespoon of butter.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the parmesan cheese and serve.

Notes/Tips

  • Serve with steamed broccoli or asparagus.
  • This recipe is gluten free.
  • This recipe calls for arborio rice. Arborio rice is a short-grain Italian rice known for its high starch content, which gives risotto its signature creamy texture. I find it in the bulk section at Winco.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Other recipes you can make with arborio rice are Avgolemono Soup and Instant Pot Cheesy Broccoli Rice.

Ingredients

Scale
  • 3 Tbsp butter, divided
  • 1/2 cup diced onion
  • 3/4 cup arborio rice
  • 2 cups chicken broth
  • 1 cup cooked chopped chicken (or 16 ounces raw chicken cut into cubes)
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup shredded parmesan cheese

    do you have any idea how to convert white rice recipes to brown rice? My husband can’t eat white rice- it sends his blood sugar way up

      Well brown rice requires a 22 minute pressure cooking time with a 10 minute natural pressure release (longer if the rice is older). So it really depends on the recipe because the other ingredients in the pot will often overcook with a 22 minute pressure cook time unfortunately. So you kind of have to get creative on making those recipes work.
