Description
Creamy rice and chicken that is super simple to make in your Instant Pot but tastes so rich!
Ingredients

- 3 Tbsp butter, divided
- 1/2 cup diced onion
- 3/4 cup arborio rice
- 2 cups chicken broth
- 1 cup cooked chopped chicken (or 16 ounces raw chicken cut into cubes)
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup shredded parmesan cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in 2 Tbsp of the butter and let it melt. Add in the onion and saute for 5 minutes. Stir in the rice and toast for 30 seconds.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. Add in the chicken, salt, pepper, garlic powder and remaining tablespoon of butter.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the parmesan cheese and serve.
