Relief Society Casserole

Relief Society is the women’s organization in the church I belong to and it is probably the largest and oldest women’s group in the world (started in the 1840s). One thing that is really important in this organization is the service piece. Members strive to show love and care for one another…especially when there is a new baby, a funeral, when someone is sick, or another special need.  Of course casseroles and one pot meals are the best for something like this because they serve a crowd, a bunch of sides aren’t necessary and it’s economical. I’ve taken a common old fashioned chicken broccoli casserole and transformed it a bit using the Instant Pot. It has less cream, butter, mayo, flour than the original and more of a light and bright element (with the lemon juice). Enjoy!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Spaghetti
  • Boneless skinless chicken thighs–or rotisserie chicken
  • Dijon mustard
  • Dried parsley
  • Kosher salt
  • Dried onion flakes
  • Crushed rosemary
  • Black pepper
  • Fresh lemon juice
  • Heavy cream
  • Cheddar cheese
  • Parmesan
  • Frozen broccoli–or another bag of vegetables you like

Steps

Pour broth into Instant Pot.

Break up the spaghetti and lay it into the pot in a criss cross pattern.

Place the chicken on top of the spaghett. Dump in the Dijon, parsley, salt, onion, rosemary and pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the lemon juice, cream, cheddar, parmesan and broccoli.

Serve and enjoy!

Notes/Tips

  • Serve with garlic bread.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Spaghetti with chicken, broccoli, lemon and parmesan made fast in the Instant Pot. 


Ingredients

Scale
  • 2 1/4 cups chicken broth
  • 8 ounces spaghetti
  • 1 pound boneless skinless chicken thighs, cut into 1/2 inch pieces
  • 1 Tbsp Dijon mustard
  • 2 tsp dried parsley
  • 1 tsp kosher salt
  • 1 Tbsp dried onion flakes
  • 1/2 tsp crushed rosemary
  • 1 tsp black pepper
  • 2 Tbsp fresh lemon juice
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded parmesan
  • 1 (12 oz) package frozen broccoli, cooked according to package directions
