Description

Spaghetti with chicken, broccoli, lemon and parmesan made fast in the Instant Pot. 


Ingredients

  • 2 1/4 cups chicken broth
  • 8 ounces spaghetti
  • 1 pound boneless skinless chicken thighs, cut into 1/2 inch pieces
  • 1 Tbsp Dijon mustard
  • 2 tsp dried parsley
  • 1 tsp kosher salt
  • 1 Tbsp dried onion flakes
  • 1/2 tsp crushed rosemary
  • 1 tsp black pepper
  • 2 Tbsp fresh lemon juice
  • 1/4 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded parmesan
  • 1 (12 oz) package frozen broccoli, cooked according to package directions

Instructions

  1. Pour broth into Instant Pot.
  2. Break up the spaghetti and lay it into the pot in a criss cross pattern. Place the chicken on top of the spaghett. Dump in the Dijon, parsley, salt, onion, rosemary and pepper.
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  4. Stir in the lemon juice, cream, cheddar, parmesan and broccoli.
  5. Serve and enjoy!
