Description
Spaghetti with chicken, broccoli, lemon and parmesan made fast in the Instant Pot.
Ingredients

- 2 1/4 cups chicken broth
- 8 ounces spaghetti
- 1 pound boneless skinless chicken thighs, cut into 1/2 inch pieces
- 1 Tbsp Dijon mustard
- 2 tsp dried parsley
- 1 tsp kosher salt
- 1 Tbsp dried onion flakes
- 1/2 tsp crushed rosemary
- 1 tsp black pepper
- 2 Tbsp fresh lemon juice
- 1/4 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup shredded parmesan
- 1 (12 oz) package frozen broccoli, cooked according to package directions
Instructions
- Pour broth into Instant Pot.
- Break up the spaghetti and lay it into the pot in a criss cross pattern. Place the chicken on top of the spaghett. Dump in the Dijon, parsley, salt, onion, rosemary and pepper.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the lemon juice, cream, cheddar, parmesan and broccoli.
- Serve and enjoy!
