It’s going to be a really fun weekend for me because my son is turning 6! He’s going to have a little party and has requested pokemon cards for his birthday present (eye roll). I still think of him as a baby but he’s going to be 6…he’s going to be in first grade. He’s going to be at school all day like a big kid. No, I guess he’s not a baby anymore. One thing that I will be making for him before he’s gone all day at school is these oatmeal cinnamon pancakes. They are absolutely delicious and since I’ve been making these lately my daughter won’t even eat any other kind. The best part is I make a big huge batch of the pancake mix and then when we’re in a hurry in the morning I can cook these up in no time.
I love the texture and taste of these pancakes. They stick with you thanks to the whole wheat flour and the oatmeal. We serve ours with peanut butter and syrup on top. Most of the time I don’t really care for pancakes but whenever I make these I have a hard time saying no!

Recipe for Oatmeal Cinnamon Pancake Mix

To make a big batch of Oatmeal Whole Wheat Cinnamon Pancake Mix:
- 4 cups quick oats
- 1 cup brown sugar
- 4 cups whole wheat flour (I use hard/soft white wheat flour)
- 3 Tbsp baking powder
- 1 cup instant dry milk
- 5 tsp salt
- 2 Tbsp ground cinnamon
- 1/2 tsp cream of tartar
Making the pancake mix into Oatmeal Whole Wheat Cinnamon Pancakes:
Makes 8 pancakes
- 1 1/4 cup mix
- 2 Tbsp canola/vegetable oil
- 1 egg
- 3/4 cup water
Instructions
To make a big batch of Oatmeal Whole Wheat Cinnamon Pancake Mix:
1. In a large container with a tight fitting lid (I use an ice cream pail) combine all the ingredients.
2. Stir until totally combined. Put on lid and shake for 30 seconds.
3. Store in the container with a tight lid. If you grind your own whole wheat flour, store the container
in the freezer to keep the nutrient content in your whole wheat flour.

Making the pancake mix into Oatmeal Whole Wheat Cinnamon Pancakes:
1. Preheat a greased griddle over medium heat.
2. In a bowl whisk together the oil, egg and water. Slowly stir in the mix to create a batter.
3. Pour 1/4 cup of the batter onto the hot griddle to make a pancake.
4. Cook to golden brown on each side, flipping when surface begins to bubble.

We could figure it for ourselves if we had some idea how many breakfast batches were in the big batch and how many 1/2 cup(?) pancakes we could get with each mix. Can we get some guidance?
