Our family’s favorite pancakes! My daughter won’t eat anything but these! 

Ingredients

To make a big batch of Oatmeal Whole Wheat Cinnamon Pancake Mix:
  • 4 cups quick oats
  • 1 cup brown sugar
  • 4 cups whole wheat flour (I use hard/soft white wheat flour)
  • 3 Tbsp baking powder
  • 1 cup instant dry milk
  • 5 tsp salt
  • 2 Tbsp ground cinnamon
  • 1/2 tsp cream of tartar
Making the pancake mix into Oatmeal Whole Wheat Cinnamon Pancakes:
Makes 8 pancakes
  • 1 1/4 cup mix
  • 2 Tbsp canola/vegetable oil
  • 1 egg
  • 3/4 cup water

Instructions

To make a big batch of Oatmeal Whole Wheat Cinnamon Pancake Mix:
1.  In a large container with a tight fitting lid (I use an ice cream pail) combine all the ingredients.
2.  Stir until totally combined.  Put on lid and shake for 30 seconds.
3.  Store in the container with a tight lid.  If you grind your own whole wheat flour, store the container
in the freezer to keep the nutrient content in your whole wheat flour.
Making the pancake mix into Oatmeal Whole Wheat Cinnamon Pancakes:
1.  Preheat a greased griddle over medium heat.
2.  In a bowl whisk together the oil, egg and water.  Slowly stir in the mix to create a batter.
3.  Pour 1/4 cup of the batter onto the hot griddle to make a pancake.
4.  Cook to golden brown on each side, flipping when surface begins to bubble.
