Description

A fast and easy Instant Pot (or slow cooker) chili soup with ground beef, ground pork, Rotel, kidney beans and fajita seasoning.


Ingredients

Scale
  • 1/2 pound lean ground beef
  • 1 pound ground pork
  • 1 medium onion, diced
  • 1 (1.25 oz) packet fajita seasoning
  • 2 cups beef broth
  • 1 tsp black pepper
  • 1 1/2 tsp chili powder
  • 1 tsp garlic powder
  • 1 (10 oz) can Rotel (I used mild)
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can kidney beans, rinsed and drained

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and pork and break it up. Add in the onion. Add in the fajita seasoning. Brown for 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Dump in the pepper, chili powder, garlic powder, Rotel, tomato sauce and kidney beans. 
  4. Cover Instant Pot and secure the lid. Set the SOUP button to 10 minutes or if you don’t have a soup button set the pressure cook/manual button to 10 minutes on low pressure. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  5. Stir, serve and enjoy! 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and pork and break it up. Add in the onion. Add in the fajita seasoning. Brown for 5 minutes. Transfer to the slow cooker.
  2. Stir in the broth, pepper, chili powder, garlic powder, Rotel, tomato sauce and kidney beans. 
  3. Cover and cook on low for 4 hours. 
  4. Stir, serve and enjoy!
