Instant Pot Country Beef Dinner
If you’re craving a hearty and comforting meal that’s packed with flavor then Instant Pot country beef dinner is for you! It was the perfect meal on a cool spring evening. I shared a portion with my neighbor and I received a nice text asking for the recipe! I told him it would be on the blog today 😉. My family loved that I even made homemade bread to go along with it. I think you’ll really love this beef stew-like dinner.
The Instant Pot was made for recipes like this one! By pressure cooking tough meats, like beef stew meat, you can achieve tenderness in a fraction of the time it would take using traditional cooking methods. This makes it a game-changer for busy households where time is of the essence. You can also make this recipe in the slow cooker if you want to get started earlier in the day.
Ingredients/Substitution Ideas
- Olive oil
- Shallot–or onion
- Mushrooms–I used white button mushrooms but you can also use baby bella or cremini
- Beef stew meat–or a roast cut up into bite size pieces
- Onion soup mix–or you can make your own from scratch
- Beef broth–or water and Better Than Bouillon Beef Base
- Baby potatoes–I bought a bag of baby potatoes and had a mix or red and yellow potatoes
- Carrots–baby carrots work well for this recipe
- Tomato paste
- Worcestershire sauce
- Cornstarch
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the shallot and mushrooms and saute for 3 minutes.


Add in the beef and sprinkle in the onion soup mix. Stir to coat the meat in the soup mix.


Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the potatoes, carrots, tomato paste and Worcestershire. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 20 minutes. When time is up let pot sit for 10-20 minutes and then move valve to venting. Remove the lid.

Stir. You can thicken the stew with cornstarch if you’d like. Stir 2 Tbsp cornstarch with 3 Tbsp water and stir the mixture into the pot on the saute setting. Once it has thickened turn off the pot.
Add in salt and pepper to taste. Ladle into bowls and serve.

Notes/Tips
- Serve with freshly baked French Bread.
- If you’d like to develop the flavor even more you can brown the beef in batches in the oil before you add in the onions and mushrooms to saute.
- You can use any type of beef suitable for stew, such as chuck roast, stew meat, or beef cubes. Just make sure to cut them into evenly sized pieces for even cooking.
- This recipe can be gluten free if you use gluten free onion soup mix and gluten free Worcestershire sauce.
- I liked using a fork to mash my potatoes in my bowl when I was eating. Very satisfying!
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 Tbsp olive oil
- 1 shallot, diced
- 8 ounces sliced mushrooms
- 32 ounces (2 lbs) beef stew meat
- 1 (1 oz) packet onion soup mix
- 1 cup beef broth
- 18 ounces baby potatoes
- 4 carrots, peeled and cut into large chunks
- 1 (6 oz) can tomato paste
- 1 Tbsp Worcestershire sauce
- 2 Tbsp cornstarch

- Heat a pan over medium high heat. Add in oil and swirl it around. Add in the shallot and mushrooms and saute for 3 minutes. Transfer to the slow cooker.
- Add beef into slow cooker and sprinkle in the onion soup mix. Stir to coat the meat in the soup mix.
- Stir in the broth, potatoes, carrots, tomato paste and Worcestershire.
- Cover and cook on low for 6 hours or until meat and veggies are tender.
- You can thicken the stew with cornstarch if you’d like. Stir 2 Tbsp cornstarch with 3 Tbsp water and stir the mixture into the slow cooker on the high setting. Cook it for 10 more minutes without the lid.
- Add in salt and pepper to taste. Ladle into bowls and serve.

I have tried to email you but it bounced back. I love all your recipes but I’m looking for one I can make for Ronald McDonald house that would be freezer sustainable.
