No Fuss Casserole–an easy one pot meal with sausage, red potatoes, carrots and green beans made fast in the Instant Pot.

No Fuss Casserole

This no fuss dinner is simple, straightforward, and requires minimal effort while still delivering a flavorful, one pot meal. The Instant Pot takes care of most of the cooking, and there’s no complicated prep involved. You just brown the sausage, layer the veggies, season, and pressure cook for a quick 4 minutes—no need to babysit it. Plus, with ingredients that you likely already have on hand, it’s a low-maintenance way to get dinner on the table without much hassle. Perfect for a busy day or when you just want something easy! You could easily make it more customizable by switching up the veggies or even using a different type of sausage, like turkey or chicken sausage, for a lighter version!

Ingredients/Substitution Ideas

  • Italian sausage–or you can use a 12 ounce package of smoked sausage that has been sliced
  • Onion
  • Chicken broth–or water and Better than Bouillon chicken base
  • Baby carrots–you can also use peeled and cut carrots
  • Red potatoes–or russet potatoes
  • Green beans
  • Yellow bell pepper–or red, orange
  • Olive oil
  • Garlic powder
  • Italian seasoning
  • Kosher salt
  • Black pepper
  • Balsamic vinegar–or red wine vinegar

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onions. Brown for 5 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Layer in the following ingredients: carrots, potatoes, green beans and then yellow peppers. Drizzle the oil over the top. Then sprinkle in the garlic powder, Italian seasoning, salt, pepper and Balsamic. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move the valve to venting and remove the lid.

Gently stir. Scoop onto plates and drizzle with the juices from the pot.

Notes/Tips

  • Serve with cornbread or dinner rolls.
  • This recipe is gluten free and dairy free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. Feel free to double the recipe for serving 6-8 people.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

An easy one pot meal with sausage, red potatoes, carrots and green beans made fast in the Instant Pot.


Ingredients

Scale
  • 1/2 pound Italian sausage (use a whole pound for a more meaty version)
  • 1 cup coarsely chopped onion
  • 3/4 cup chicken broth
  • 1 cup baby carrots
  • 2 red potatoes (10 ounces), cut into 1/2 inch cubes
  • 1 cup green beans
  • 1/2 of one yellow bell pepper, diced large
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 Tbsp Balsamic vinegar
