Description
An easy one pot meal with sausage, red potatoes, carrots and green beans made fast in the Instant Pot.
Ingredients

- 1/2 pound Italian sausage (use a whole pound for a more meaty version)
- 1 cup coarsely chopped onion
- 3/4 cup chicken broth
- 1 cup baby carrots
- 2 red potatoes (10 ounces), cut into 1/2 inch cubes
- 1 cup green beans
- 1/2 of one yellow bell pepper, diced large
- 1 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1 Tbsp Balsamic vinegar
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onions. Brown for 5 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Layer in the following ingredients: carrots, potatoes, green beans and then yellow peppers. Drizzle the oil over the top. Then sprinkle in the garlic powder, Italian seasoning, salt, pepper and Balsamic.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move the valve to venting and remove the lid.
- Gently stir. Scoop onto plates and drizzle with the juices from the pot.
