Description

An easy one pot meal with sausage, red potatoes, carrots and green beans made fast in the Instant Pot.


Ingredients

Scale
  • 1/2 pound Italian sausage (use a whole pound for a more meaty version)
  • 1 cup coarsely chopped onion
  • 3/4 cup chicken broth
  • 1 cup baby carrots
  • 2 red potatoes (10 ounces), cut into 1/2 inch cubes
  • 1 cup green beans
  • 1/2 of one yellow bell pepper, diced large
  • 1 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 Tbsp Balsamic vinegar

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onions. Brown for 5 minutes.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Layer in the following ingredients: carrots, potatoes, green beans and then yellow peppers. Drizzle the oil over the top. Then sprinkle in the garlic powder, Italian seasoning, salt, pepper and Balsamic. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move the valve to venting and remove the lid.
  5. Gently stir. Scoop onto plates and drizzle with the juices from the pot.
