Neiman Marcus Casserole–a creamy Instant Pot or slow cooker chicken dish with cheddar, bacon, green onions, sliced almonds and a crunchy Ritz cracker topping.

Neiman Marcus Casserole
This Neiman Marcus chicken casserole recipe is an Instant Pot or slow cooker casserole version of the famous department store’s cafe dish. Saucy chicken, bacon, Cheddar, and almonds are topped with a buttery cracker topping in this quick-prep dinner.
Ingredients/Substitution Ideas
- Chicken broth–or water and Better than Bouillon chicken base
- Boneless skinless chicken breasts/thighs–frozen is okay
- Poultry seasoning
- Onion powder
- Garlic powder
- Black pepper
- Kosher salt
- Cornstarch
- Milk
- Sour cream
- Sharp cheddar cheese–or colby jack
- Bacon crumbles
- Green onions
- Sliced almonds
- Hot sauce–I used Frank’s
- Ritz crackers–optional for the topping
- Butter
Steps
Pour broth into Instant Pot. Add in the chicken. Sprinkle the chicken with poultry seasoning, onion powder, garlic powder, pepper and salt.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 15 minutes on LOW pressure for frozen chicken or 12 minutes on low pressure for fresh chicken. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Place chicken on a cutting board and shred or chop. Set aside.
In a small bowl stir together the cornstarch with 3 Tbsp of cold water. Turn Instant Pot to saute setting. Stir the mixture into the pot to thicken the sauce. Turn off the Instant Pot.

Stir the milk and sour cream together with a half cup of the sauce from the pot to temper it. Stir the mixture into the pot along with the chicken, cheese, bacon, green onions, almonds and hot sauce.

In a bowl mix together the crushed crackers and the butter. Sprinkle the crackers on top of chicken mixture in the Instant Pot. If you have an air fryer lid place it on top and bake for 2-3 minutes at 350° F.

Serve mixture over hot cooked rice, mashed potatoes or with a slice of crusty bread.


Notes/Tips
- Serve with roasted vegetables like broccoli, carrots and cauliflower.
- You can easily leave out the Ritz cracker topping.
- To make this gluten free leave off the Ritz topping.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

How to make rice at the same time
Pot-in-pot rice is a method of cooking rice in a separate container placed inside the Instant Pot. This method allows you to cook rice and the chicken at the same time. Here’s how you can cook rice at the same time as the chicken.
Ingredients:
- 2 cup of white rice
- 3 cups of water
Instructions:
- Add the rice to a heatproof container that fits inside the Instant Pot (I often use this stainless steel pan*). Add in the rice and water.
- Add the chicken ingredients into the Instant Pot.
- Place the heatproof container with the rice on top of the chicken, using a tall trivet* to keep it elevated.
- Close the Instant Pot lid and set the valve to sealing. Cook as stated in the recipe card.
- Carefully remove the heatproof container with the rice from the Instant Pot. It will be perfectly cooked!
Note: You can use long grain white rice, converted rice, basmati rice, jasmine rice. Brown rice uses a longer cooking time (22 minutes) and won’t work for (pot-in-pot) this particular recipe.

- Cover and cook on low for 4 horus.
- Place chicken on a cutting board and shred or chop. Set aside.
- In a small bowl stir together the cornstarch with 3 Tbsp of cold water. Stir the mixture into the slow cooker to thicken the sauce. Turn slow cooker to high, without the lid.
- Stir the milk and sour cream together with a half cup of the sauce from the pot to temper it. Stir the mixture into the slow cooker along with the chicken, cheese, bacon, green onions, almonds and hot sauce.
- In a bowl mix together the crushed crackers and the butter. Sprinkle the crackers on top of chicken mixture in the slow cooker.
