Alabama Casserole–seasoned chicken, rice and spinach drizzled with Alabama white barbecue sauce. A fast Instant Pot recipe.

Alabama Casserole

Today’s recipe is an easy dump and go chicken and rice dish that is topped with a creamy tangy topping of Alabama barbecue sauce. White Alabama barbecue sauce is a mayonnaise-based sauce traditionally served with smoked chicken. You certainly could forego using the homemade sauce but if you’ve never tried it before I suggest stirring it together and trying it! I think you’ll really love it.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base*
  • Converted rice*–or long grain white, basmati, jasmine
  • Boneless, skinless chicken thighs–I buy frozen at Costco. Or chicken tenderloins can be used.
  • Onion powder
  • Garlic powder
  • Kosher salt
  • Black pepper
  • Smoked paprika
  • Worcestershire sauce
  • Liquid smoke*
  • Spinach–fresh or frozen
  • Mayonnaise
  • Apple cider vinegar
  • Cayenne pepper
  • Brown sugar

Steps

Add broth into Instant Pot. Sprinkle in the rice. Place chicken on top of rice. Sprinkle the chicken with onion powder, garlic powder, kosher salt, black pepper, smoked paprika, Worcestershire and liquid smoke. 

Cover Instant Pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes. Move valve to venting. Remove the lid. Stir in the spinach.

In a bowl stir together all white bbq sauce ingredients. 

Serve rice and chicken with a little drizzle of bbq sauce on top.

Notes/Tips

  • Serve with fresh raw veggies like celery, carrots, cucumbers etc.
  • This recipe can be gluten free if you use gluten free worcestershire sauce and liquid smoke.
  • This recipe is dairy free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Other recipes you can make with liquid smoke are “smoked” pulled pork and bacon mac.
  • What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

Description

Ingredients

Scale
  • 1 1/2 cups chicken broth
  • 1 cup converted rice
  • 1 pound boneless, skinless chicken thighs, cut into cubes
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp liquid smoke
  • 2 cups chopped spinach

White BBQ Sauce

  • 1/4 cup mayonnaise
  • 1/2 tsp Worcestershire sauce
  • 1 1/2 tsp apple cider vinegar
  • Pinch of cayenne pepper
  • 1/8 tsp brown sugar
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 1/8 kosher salt
  • 1/8 black pepper

Instructions

    I made this tonight! Super easy and quick! The sauce was VERY vinegary. I was the only one, out of 5, that could eat it. I’ll definitely make this again, but cut back the vinegar a bit.

    Your notes indicated chicken tenders and basmati rice could be used which I used. However, they both turned out very dry with the 5 minute cook time and 10 minute sit time. If I make it again, what should be done differently?

    I appreciate all the work you put into providing us with daily recipes and always look forward to seeing each email from you.

      Perhaps change the cook time to 3 minutes with 5 minute natural pressure release. Or you could try the 5 minute time but use low pressure.

    what is “converted rice? we generally use jasmine rice for everything, would that work?

    This recipe was a lifesaver when it popped up in my email. I had one large chicken breast thawed out for supper but had no idea what to make with it. I had all the ingredients including the spinach. I only had long grain brown rice though. I adjusted my pressure cooker accordingly. Turned out great! Thanks so much for all your recipes!
