Today’s recipe is adapted from Just a Pinch. The author, Pat, says, “I moved to Cocoa, FL a couple years after high-school. About once a year the Brevard Sentinel Newspaper had a fairly large insert of recipes from the readers. I still have two of those inserts (the middle 60s). This recipe is one I copied way back then and have used over the years. There are different versions of it. When I make this, everyone enjoys it and after one helping states, More Please!”

My version uses the Instant Pot and instead of pasta I went for brown rice. I chose to use up what I had in the freezer so I used edamame instead of frozen peas. It’s just one of those recipes that you can mix and match what you have on hand.

Ingredients/Substitution Ideas

  • Lean ground beef--or ground turkey
  • Onions–yellow, white
  • Beef broth–or water and Better than Bouillon
  • Converted rice–or brown rice or long grain white rice
  • Chili powder
  • Worcestershire sauce
  • Garlic powder
  • Celery salt
  • Frozen sweet corn
  • Frozen shelled edamame–or peas
  • Water chestnuts–or diced celery
  • Heavy cream
  • Cheddar cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rice, chili powder, worcestershire, garlic powder and celery salt.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes for converted rice or 22 minutes for brown rice. When time is up let pot sit for 10 minutes and then move valve to venting.  Remove the lid.

Stir in the corn, edamame or peas, water chestnuts and cream.

Sprinkle the cheese on top. 

Use an air fryer lid to bake at 350 degrees for 5 minutes or you can move the stainless steel pot to the oven and bake at 350 degrees for 10 minutes. 

Serve and enjoy.

Notes/Tips

  • Serve with fresh fruit or roasted vegetables.
  • This recipe can be gluten free if you use gluten free worcestershire sauce.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ground beef with rice, vegetables and cheese made in the Instant Pot.


Ingredients

Scale
  • 1/2 pound lean ground beef
  • 1/2 cup diced onions
  • 1 1/2 cups beef broth
  • 1 cup converted rice or brown rice
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp celery salt
  • 1/2 cup frozen sweet corn
  • 1/2 cup frozen shelled edamame or peas
  • 1 (8 oz) can sliced water chestnuts, drained
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease.

    I would like to substitute noodles for rice.
    How should I adjust the amount of broth, noodles, and time to cook?

      I would use 2 cups of broth and then 8 oz of noodles. The cooking time will be around 4 minutes for most pastas. Good luck!

    Wow this was great! I doubled the amount of meat and used ground turkey instead. I’d recommend cooking brown rice longer than 22 min for softer texture.
