Description
Ground beef with rice, vegetables and cheese made in the Instant Pot.
Ingredients

- 1/2 pound lean ground beef
- 1/2 cup diced onions
- 1 1/2 cups beef broth
- 1 cup converted rice or brown rice
- 1 1/2 tsp chili powder
- 1 1/2 tsp worcestershire sauce
- 1 tsp garlic powder
- 1 tsp celery salt
- 1/2 cup frozen sweet corn
- 1/2 cup frozen shelled edamame or peas
- 1 (8 oz) can sliced water chestnuts, drained
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice, chili powder, worcestershire, garlic powder and celery salt.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes for converted rice or 22 minutes for brown rice. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir in the corn, edamame or peas, water chestnuts and cream. Sprinkle the cheese on top.
- Use an air fryer lid to bake at 350 degrees for 5 minutes or you can move the stainless steel pot to the oven and bake at 350 degrees for 10 minutes.
