Description

Ground beef with rice, vegetables and cheese made in the Instant Pot.


Ingredients

Scale
  • 1/2 pound lean ground beef
  • 1/2 cup diced onions
  • 1 1/2 cups beef broth
  • 1 cup converted rice or brown rice
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp celery salt
  • 1/2 cup frozen sweet corn
  • 1/2 cup frozen shelled edamame or peas
  • 1 (8 oz) can sliced water chestnuts, drained
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for about 5 minutes. Drain off excess grease. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the rice, chili powder, worcestershire, garlic powder and celery salt.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes for converted rice or 22 minutes for brown rice. When time is up let pot sit for 10 minutes and then move valve to venting.  Remove the lid.
  5. Stir in the corn, edamame or peas, water chestnuts and cream. Sprinkle the cheese on top. 
  6. Use an air fryer lid to bake at 350 degrees for 5 minutes or you can move the stainless steel pot to the oven and bake at 350 degrees for 10 minutes. 
  7. Serve and enjoy.
