Crockpot Mississippi Meatballs

Mississippi Meatballs

I loved these meatballs! The combination of savory au jus, tangy banana peppers, and ranch seasoning creates a flavor profile that’s punchy but not over the top. If you love Mississippi Roast you’ll love these meatballs. The sauce is tangy and salty and so good I licked it up off my plate.

Ingredients/Substitution Ideas

  • Au Jus packet–or brown gravy mix
  • Water
  • Banana pepper juice–or pepperoncini juice
  • Lean ground beef–or ground turkey
  • Egg
  • Shredded parmesan cheese–or grated asiago
  • Panko–or regular breadcrumbs
  • Onion–or 1 tsp onion powder
  • Garlic cloves–or 1 tsp garlic powder
  • Dry ranch dressing mix–I used Hidden Valley. I usually buy the big container at Costco.
  • Banana peppers–or pepperoncini

Steps

Add Au Jus, water and banana pepper juice into crockpot and whisk. 

In a mixing bowl add the ground beef, egg, parmesan, panko, onion, garlic and ranch dressing. Mix until just combined.

Form into golf ball size meatballs and place into the crockpot. Add in the banana peppers.

Cover and cook on high for 2 hours or on low for 3 hours. 

Serve meatballs drizzled with juices and peppers. 

Crockpot Mississippi Meatballs

Notes/Tips

  • These are great over mashed potatoes, buttered noodles, rice or crusty bread. Serve alongside a green vegetable like green beans or broccoli.
  • I used my 6 quart Ninja slow cooker.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • When combining the meatball ingredients, mix until just combined. Overworking the meat can result in tough, dense meatballs.
  • You can form the meatballs the night before and refrigerate them, then simply add them to the crockpot in the morning for an even easier prep.
  • For extra flavor, you can brown the meatballs in a skillet before adding them to the crockpot.

Ingredients

  • 1 (1 oz) packet Au Jus
  • 2 cups water
  • 1/4 cup banana pepper juice
  • 16 oz lean ground beef
  • 1 egg
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup panko
  • 1/4 cup minced onion
  • 5 garlic cloves, minced
  • 2 Tbsp dry ranch dressing mix
  • 1/2 cup banana peppers

Instructions

  1. Add Au Jus, water and banana pepper juice into crockpot and whisk. 
  2. In a mixing bowl add the ground beef, egg, parmesan, panko, onion, garlic and ranch dressing. Mix until just combined.
  3. Form into golf ball size meatballs (pack firmly) and place into the crockpot. 
  4. Add in the banana peppers.
  5. Cover and cook on high for 2 hours or on low for 3 hours. 
  6. Serve meatballs drizzled with juices and peppers.

    These meatballs were delicious and have become a new favorite. Is there nothing that Mississippi can’t do? I had a jar of pepperoncinis from previous Mississippi outings, so I used them instead of banana peppers. I paired these with some home made SpaghettiOs — https://themodernproper.com/easy-homemade-spaghettios
