Million Dollar Taco Pasta
This recipe is perfect for those nights when you just can’t decide between tacos and spaghetti because you really do get the best of both worlds. It’s called Million Dollar Taco Spaghetti because the cream cheese and melty shredded cheese make the sauce incredibly rich, creamy and downright irresistible. I actually thought it tasted just as good (if not even better) the next day after all the flavors had a chance to come together. If your family loves taco night, I have a feeling you’re going to love the flavor of this one. Enjoy!
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Kosher salt
- Black pepper
- Garlic powder
- Onion powder
- Ground cumin
- Chili powder
- Dried oregano
- Smoked paprika–or regular paprika
- Beef broth–or chicken broth
- Spaghetti–or thin spaghetti
- Rotel–I used mild
- Tomato sauce
- Taco sauce–green or red, medium or mild
- Cream cheese
- Mexican blend shredded cheese–or cheddar, Colby Jack or pepper jack
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, onion powder, cumin, chili powder, oregano and smoked paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Break the spaghetti in half and lay it in a criss cross pattern in the pot. Dump in the Rotel, tomato sauce, taco sauce and cream cheese (don’t stir).


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir well. Stir in the cheese. Serve and enjoy!


Notes/Tips
- Serve with green salad or caesar salad.
- I used my 6 quart Instant Pot*. You can also make this in a 4 or 8 quart pot. Try doubling the recipe for more leftovers.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days.
