March Madness Results: Soups

Last set of soup results for this round!  Wow.  I never realized I had so many soup recipes before.  Meme tried out the ham, bean and lentil soup as well as the red beans and rice stew.  
Ham, Bean and Lentil Soup

Red Beans and Rice Stew
She said the ham and bean soup was “really tasty. I didn’t need to season it at all when it was finished cooking.
My friends liked it a lot, too. It was light but filling and was great to eat on a cold, dreary day.
This soup was inexpensive; I think it was less than $12 for the whole thing. It’s a little bit more expensive than the red beans & rice recipe but was still a good value.
I would probably make this again. Even though it wasn’t my most favorite soup I’ve ever made or had, I still enjoyed it. I would recommend this to my friends and family.”  
The Red Beans and Rice Stew was delicious! I served it to a group of my friends while we watched the Grammys. I live in New Orleans, and all of my friends are from Louisiana so they know red beans & rice!
All of my friends gave it 5 stars and said they’d want to eat it again. I am 24, so it was nice that it cost me less than $10 to make a meal for 6 of us. Great value, and tastes great!
This is the first time that I didn’t feel like I needed to or wanted to change the recipe. The only change I might make would be to add Conecuh sausage to make it a little spicier, a personal preference. We did add some hot sauce to taste.
The meal tastes better the next day and freezes well, both great for someone like me. Overall, I really enjoyed this recipe! The only reason I won’t be making it as soon as I want to is that I have a lot more new recipes that I want to try, but I will be recommending this to friends & family!”

The Coconut Thai Soup wins fairly easily.  Lynda tried these two and said that the Tortellini Soup had, “too much prep (chopping, browning, etc).  It took both my husband and I almost an hour to prep all the ingredients.  It tasted good, but too much work for a work morning.  I would probably make it again on a weekend when we have a lot of time.  The flavor is like a good minestrone soup.  Overall a good dish.”  

Coconut Thai Soup

The Coconut Thai Soup had, “only a little prep – easy. Great for a work day when you need to make a good soup, but don’t have a whole lot of time.  It will definitely go into our meal rotation!  The soup had excellent taste!  It was loved by all.  And we will definitely make again.  Sweet, savory, great textures.”  Lynda, I totally agree with you!  This soup is amazing.


It will be up against the Red Beans and Rice Stew next round.
