What a low scoring game!  What happened here Tricia?  “The tomatillo cream cheese
enchiladas donโ€™t really make sense as a crockpot recipe. You still have to do all
the work in rolling the enchiladas, so thereโ€™s no shortcut there, and not to
mention the fact that the cook time is 2 hours on high. With working full time,
I get the best use out of my crockpot during the work week when I can set
something on low for 8 hours and come home to a nice dinner thatโ€™s ready and
waiting. With this recipe cooking for only 2 hours, that forces me to make it
on the weekend. Itโ€™s just not feasible to come home after work, prepare the
enchiladas, and then wait 2 hours to actually eat them. In that case, I might
as well bake them.

With that being said, this
dish was really good. As my husband said, he was โ€œpleasantly surprised.โ€ He
feared that the enchiladas would be soggy, but that was not the case at all. This
recipe would be great in the crockpot on those hot summer days when you donโ€™t
want to heat up your whole house by turning on your oven. But, for any
reason other than that, Iโ€™ll be baking these enchiladas in the oven next time.  
I had never cooked with tomatillos before (and have rarely cooked with
any other pepper besides bell peppers), so I was excited to try something new.”

What about the tomatillo tacos?  “Honestly, though, this recipe really disappointed me.
I was worried that the chicken would end up being too spicy, or maybe I just
wouldn’t like the flavors of the peppers because I had never really had them
before. That wasn’t the case at allโ€”in fact, it was actually pretty bland, and
the flavors I could taste were ones that I didnโ€™t like. We were planning on
having leftovers for dinner later in the week, but I’m going to plan to use
them in another dish instead, where they wonโ€™t be the dominating flavor. I really have no desire to eat these tacos again.”

On a sidenote:  I really really really like the tomatillo chicken filling.  I’m not sure what happened with Tricia or why our tastebuds feel so differently.  I do add a lot of salt and pepper to taste as well as plenty of additional cumin before serving mine.  That could be part of the difference.  Tricia also has a slow cooker blog.  Check it out here.

Chicken and Mushrooms

Becca tried out these two similar recipes.  She said, “The Chicken and Mushrooms smelled SO good
cooking.  It seemed like there was
something missing.  It tasted bland. If I
made this again I would add Salt or soy sauce. 
It was a nice creamy sauce and it thickened up great! (I did the
cornstarch mixture.)”
Mushroom Tarragon Chicken
Becca said that “This recipe was really, really similar to the Chicken and
mushroom recipe. The final outcome was really different though.  I (and my family) liked the flavor of this so
much more.  This recipe called for soy
sauce and salt and that gave it the perfect amount of saltiness. The tarragon
added a great flavor and I loved it.  I
marked it down on value because I had to go buy the tarragon and it was kinda
expensive but now Iโ€™m looking for other delicious recipes that use tarragon
because I liked the flavor so much.  This
sauce never did thicken up for me much so if I make it again Iโ€™d do the
cornstarch mixture from the previous recipe.”
So the tomatillo cream cheese enchiladas will face off against the mushroom tarragon chicken next round.  Should be interesting!
