Description
A creamy and tangy Instant Pot chicken and rice dish made with arborio rice, lemon juice, capers, and parmesan for a fun twist on chicken piccata.

- 3 cups chicken broth
- 6 Tbsp fresh lemon juice
- 1 cup arborio rice
- 2 tsp garlic powder
- 16 ounces boneless skinless chicken thighs, cut into bite size pieces
- 1 tsp lemon pepper seasoning
- 1 tsp dried parsley
- 4 ounces cream cheese
- 4 Tbsp capers
- 1/2 cup parmesan cheese
Instructions
- Pour broth and lemon juice into Instant Pot. Sprinkle in the rice and garlic powder. Add in the chicken on top and sprinkle the chicken with lemon pepper and parsley. Place cream cheese on top of chicken.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir. Stir in the capers and parmesan. Serve and enjoy!
