Description

An easy one pot meal with rice, ground beef, corn, beans and salsa. Make it fast in the Instant Pot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 tsp cumin
  • 1/4 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 1/2 cups chicken or beef broth
  • 1 cup converted rice
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 cup frozen sweet corn
  • 1 1/2 cups Herdez salsa verde (mild), divided
  • 2 ounces shredded colby jack cheese
  • Toppings: tortilla chips, sour cream, green onion or cilantro

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for about 5 minutes. Drain off excess grease. Stir in the cumin, salt, garlic powder and chili powder. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice. Dump the beans, corn and 1 cup of the salsa on top. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes then move valve to venting and remove the lid.
  5. Stir in the cheese and remaining half cup of salsa. Scoop onto plates and serve with desired toppings.
