Description
An easy one pot meal with rice, ground beef, corn, beans and salsa. Make it fast in the Instant Pot.
Ingredients

- 1 pound lean ground beef
- 1 tsp cumin
- 1/4 tsp kosher salt
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1 1/2 cups chicken or beef broth
- 1 cup converted rice
- 1 (15 oz) can black beans, rinsed and drained
- 1 cup frozen sweet corn
- 1 1/2 cups Herdez salsa verde (mild), divided
- 2 ounces shredded colby jack cheese
- Toppings: tortilla chips, sour cream, green onion or cilantro
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for about 5 minutes. Drain off excess grease. Stir in the cumin, salt, garlic powder and chili powder.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Dump the beans, corn and 1 cup of the salsa on top. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes then move valve to venting and remove the lid.
- Stir in the cheese and remaining half cup of salsa. Scoop onto plates and serve with desired toppings.
