Description
A small batch, super fast and easy recipe for peach cobbler. It’s the perfect summer dessert and tastes great with a scoop of vanilla ice cream on top.
Ingredients
For the peaches:
- 1 (29 oz) can yellow peaches, drained (or 3 1/2 to 4 cups of sliced fresh peaches)
- 1 Tbsp white sugar
- 1 Tbsp brown sugar
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/2 tsp lemon juice
- 1 tsp cornstarch
For the topping:
- 1/2 cup all purpose flour
- 2 Tbsp white sugar
- 2 Tbsp brown sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3 Tbsp butter
Instructions
- In a pot-in-pot dish add the drained peaches, 1 Tbsp white sugar, 1 Tbsp brown sugar, cinnamon, nutmeg, lemon juice and cornstarch. Toss well so that the peaches are coated.
- In a small bowl stir together the flour, 2 Tbsp white sugar, 2 Tbsp brown sugar, baking powder and salt. Use a pastry blender or fork to blend in the butter until the mixture resembles coarse meal.
- Sprinkle the peaches with the flour mixture. Don’t cover the dish.
- Pour 1 ½ cups water in the bottom of the Instant Pot. Place a trivet in the bottom of the pot. Lower the pot-in-pot dish on top of the trivet.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid.
- Place the air fryer lid on top of the Instant Pot. Set the air fry button to 6 minutes at 375 degrees. Remove the lid and check for doneness. The top should be golden brown.
- Serve the cobbler with a scoop of vanilla ice cream. Enjoy!
Notes
Equipment needed: a trivet, pot-in-pot dish and an air fryer lid. If you don’t have an air fryer lid you can make the cobbler in the oven.

Toss well so that the peaches are coated. In a small bowl stir together the flour, 2 Tbsp white sugar, 2 Tbsp brown sugar, baking powder and salt. Use a pastry blender or fork to blend in the butter until the mixture resembles coarse meal. Sprinkle the peaches with the flour mixture. Bake at 425 degrees for 30 minutes.
To make the cobbler in the slow cooker: add the drained peaches, 1 Tbsp white sugar, 1 Tbsp brown sugar, cinnamon, nutmeg, lemon juice and cornstarch into the slow cooker. Toss well so that the peaches are coated. In a small bowl stir together the flour, 2 Tbsp white sugar, 2 Tbsp brown sugar, baking powder and salt. Use a pastry blender or fork to blend in the butter until the mixture resembles coarse meal. Sprinkle the peaches with the flour mixture. Cover and cook on high for 2-3 hours.
