Instant Pot Southern Hamburger Steaks–seasoned beef patties with mushroom and onion brown gravy. The steaks are full of flavor and taste so good served over mashed potatoes.

Instant Pot Southern Hamburger Steaks
These southern hamburger steaks are a great way to dress up a pound of ground beef. This meal can be prepped ahead of time and enjoyed on even the busiest weeknights. The mushroom and onion gravy is sooooo good and it’s not hard to make at all.
Ingredients you’ll need
For the hamburger steak patties:
- Lean ground beef–I like 85/15 best for this recipe
- Egg
- Breadcrumbs–I used plain but Italian seasoned breadcrumbs also work
- Bacon crumbles–I like buying these in the big bag from Costco
- Seasoned salt–I used Lawry’s brand
- Dehydrated onion flakes–I buy this in a big container from Costco
- Garlic powder
- Black pepper
- All purpose flour
For the gravy:
- Olive oil–or canola or vegetable oil
- Diced onions—use this thing* for the easiest and fasted diced onions ever
- Sliced mushrooms–white button or cremini
- Water
- Better than Bouillon Beef Base
- Worcestershire sauce–or low sodium soy sauce
- Milk
- All purpose flour
Instructions
- Make steak patties: In a mixing bowl add the ground beef, egg, breadcrumbs, bacon, seasoned salt, onion flakes, garlic powder and pepper. Use clean hands to combine the mixture. Form into 4 larger patties or 6 small patties. Press to flatten.
- Dredge: Sprinkle the ¼ cup of flour on a plate. Lightly dredge the patties in the flour. Set aside.
- Saute: Turn Instant Pot to saute setting. When display says HOT add in olive oil, onions and mushrooms. Saute for about 5 minutes. Scrape pan so that nothing is sticking. Turn off Instant Pot.
- Add ingredients: Place the patties on top of the mushrooms. Pour the water into the pot over the patties. Add the beef base and Worcestershire sauce into the water (the beef base will dissolve into the water when pressure cooked).
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for at least 5 minutes before moving the valve to venting. Remove the lid.
- Shake flour and milk together: In a little jar add the milk and flour. Put the lid on the jar and shake well until the flour and mix are a smooth, combined mixture.
- Move the patties out of the pot and place on a plate (use a slotted spoon to move them out gently).
- Thicken: Turn Instant Pot to sauté setting. Add the flour mixture into the pot and stir until gravy has thickened.
- Serve gravy over the hamburger steaks. Serve with mashed potatoes, if desired.
Notes/Tips
- I used my 6 quart Instant Pot Duo 60 7 in 1*. You can also make this in an 8 quart pot.
- Use a lean beef so that the hamburger steaks and gravy don’t get too greasy. For me 85/15 or 90/10 beef is the best because it still has some fat (but not too much).
- For more color and flavor try browning the dredged patties in a tablespoon of oil over medium heat in a pan on the stove for 1-2 minutes on each side.
- Either white mushrooms or cremini mushrooms can be used. Cremini have more of an earthy flavor to them.
- Add a little heat to the dish by adding in a pinch of cayenne pepper.
- Prep ahead of time! The hamburger steak patties can be prepared and frozen for up to three months. If the patties are frozen I would pressure cook for 3 minutes instead of 1 minute. This makes the recipe so much faster the night of!
- If you have mushroom haters in your house try chopping them instead of slicing them. They’ll be more disguised that way.
- Serve the hamburger steaks and gravy over mashed potatoes or buttered egg noodles. Make instant mashed potatoes if you’re in a time pinch. Or use a separate Instant Pot to make homemade mashed potatoes.

Absolutely delicious recipe, will definitely keep this on the menu rotation. The sauce had very nice depth of flavor which doesn’t always happen in cream sauces. Made using 4 patties and they were slightly more well done than is our preference. Next time will set pressure cooking time to zero minutes as have done in other recipes.
