Instant Pot Cowboy Up Supper–spaghetti with bacon, beans, chili seasonsings and cheese. A hearty supper that will fill up your little and big cowboys.

Instant Pot Cowboy Up Supper
I know a meal was good when I can’t wait to eat the leftovers for lunch the next day! This is one of those dinners. My family all agreed that it hit the spot after a long day at work and school and after school actvities. This is a fun and spiced up version of regular boring spaghetti. It has Rotel tomatoes (diced tomatoes with green chiles), kidney beans, pepper jack cheese, chili powder, cumin and don’t forget the bacon!
If you’re busy this time of year with end of year school events and spring sports you might want to make this ahead of time. I made the recipe through step 6, set the pot to pressure cook and then left at 3 pm. I didn’t get home until 6:30. I removed the lid, stirred it up and served a delicious dinner! It stayed totally good for over 3 hours! No drive thru or frozen meals here! Yay!
Ingredients/Substitution Ideas
- Uncooked bacon–or turkey bacon
- Lean ground beef–I used 85/15. You can also use ground turkey or ground pork.
- Diced onion–I like to use frozen diced onions for convenience.
- Beef broth–or water and Better than Bouillon Beef Base
- Worcestershire sauce
- Chili powder
- Cumin
- Garlic salt
- Lemon pepper
- Dried oregano
- Spaghetti–or angel hair
- Kidney beans–or pinto beans or chili beans
- Tomato sauce–or spaghetti sauce
- Rotel tomatoes–I used the mild variety. You can find Rotel next to the other diced tomatoes. You can also use a can of diced tomatoes and a can of diced green chiles.
- Pepperjack cheese–or another cheese of your choice like monterey jack, colby, cheddar, etc.
Steps
- Fry bacon: Turn Instant Pot to saute setting. When display says HOT add in the bacon pieces and fry until crispy. Use a slotted spoon to remove the bacon and place it on a paper towel lined plate. Crumble the bacon into pieces when it has cooled.
- Brown beef: Add the ground beef into the Instant Pot with the remaining bacon grease. Break up the ground beef. Add in the onion. Brown the beef and cook the onions for about 5 minutes.
- Deglaze the pot: Add in the beef broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add in seasonings: Add in the Worcestershire, chili powder, cumin, garlic salt, lemon pepper and oregano and stir.
- Layer in the spaghetti: Break the spaghetti in half and lay it into the pot in a criss-cross pattern.
- Cover spaghetti with canned ingredients: Dump the beans, tomato sauce and Rotel on top of the spaghetti noodles to cover them completely.
- Pressure cook: Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes on high pressure. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Cheese it up and serve: Stir well. Stir in half of the cheese. Scoop onto serving dishes and sprinkle each portion with remaining cheese and crumbled bacon. Eat and enjoy!
Notes/Tips
- This tastes great topping with a dollop of sour cream and some diced green onions. I also like to dice up some tame pickled jalapenos to put on top of the spaghetti.
- This is a hearty dinner in and of itself but you can serve alongside a green tossed salad or some raw veggies with dip.
- I used my 6 quart Instant Pot* but you can also make this in your 8 quart pot. For the 3 quart pot you’ll need to halve the recipe.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 4 slices of uncooked bacon, cut into half inch pieces
- 1 pound lean ground beef
- 1 cup diced onion
- 2 cups beef broth
- 3 Tbsp Worcestershire sauce
- 2 Tbsp chili powder
- 1 Tbsp cumin
- 1 tsp garlic salt
- 1 tsp lemon pepper
- 1 tsp dried oregano
- 8 ounces uncooked spaghetti
- 1 (14.5 oz) can kidney beans, rinsed and drained
- 2 (8 oz) cans tomato sauce
- 1 (10 oz) can Rotel tomatoes (I used mild)
- 1 1/2 cups shredded pepperjack cheese

So so good. I just followed the instructions and the results were perfect. My wife could not say enough about how good it taste. Mine did turn out with a little extra liquid which made it so good. Don’t fret, the warm over takes care of that issue if you are bothered by it.

Recipe tastes good, however, lots of liquid left over and is like spaghetti soup. Picture shows otherwise. Maybe reduce broth or strain off most of the liquid and then mix in cheese?? Little disappointed with pictures vs reality

That’s very interesting because mine didn’t have any extra liquid. Did you weigh out the pasta? I’m wondering if you had less in there. Perhaps next time you could reduce liquid by a quarter cup or so?
