Instant Pot Caramel Apple Pecan Cobbler
This is a yummy fall dessert. If you love pecan pie and if you love caramel apples you will love this caramel apple pecan cobbler. You can make it in the Instant Pot (if you have an air fryer lid) or you can make it in the oven. Both ways turn out delicious!
We love this dessert on a Sunday evening topped with a scoop of vanilla ice cream. Greg is a sucker for all apple desserts so he definitely loved this one.
Ingredients/Substitution Ideas

- Granny smith apples–sliced or diced fairly small
- Brown sugar
- White sugar
- Lemon juice
- Cornstarch
- Cinnamon
- Chopped Pecans–I buy these in the bulk section at Winco
- Caramel sauce–find this in the ice cream topping aisle
- Flour
- Baking powder
- Salt
- Butter
- Water
- Cinnamon sugar–about 2 tsp sugar mixed with 1/4 tsp cinnamon
Steps
- Make the apple filling: In a pot-in-pot dish* add the apples, brown sugar, white sugar, lemon juice, cornstarch and cinnamon. Toss well. Sprinkle the pecans on top of the apples. Then drizzle with the caramel sauce.
- Make the cobbler topping: In a medium mixing bowl whisk together the flour, brown sugar, white sugar, baking powder and salt. Then cut in the butter with a pastry blender* or a fork. Pour in the water and then use your hands to form the mixture into a dough.
- Spoon the dough over the apples to cover as best as possible. Sprinkle the cinnamon sugar over the top. Cover the dish with foil.
- Pressure cook: Pour 1 ½ cups water into bottom of Instant Pot. Place the pot-in-pot dish on top of a sling/trivet and lower into the bottom of the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes. When time is up move valve to venting. Remove the lid.
- Brown up the top: Remove the foil. Place air fryer lid on top of pot and air fry for 5-6 minutes at 400 degrees until the top is golden brown.
- Serve: Drizzle the top with more caramel sauce and serve with a scoop of ice cream.

Notes/Tips
- Serve with a scoop of vanilla ice cream or whipped cream on top.
- I used my 6 quart Duo Crisp Instant Pot*. You can also make this in an 8 quart pot.
- I used my 7×3 inch Fat Daddios pan* as the pot-in-pot dish.
- I used my OXO sling/trivet* to lower the dish into the pot and to retrieve it.
- I don’t suggest doubling this recipe in the Instant Pot. Deep pot-in-pot dishes don’t seem to work very well in the IP. You can double this recipe if making in the oven. Bake in a 9×13 inch dish.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients
For the apple filling:
- 3 granny smith apples, peeled and sliced
- 2 Tbsp brown sugar
- 1 Tbsp white sugar
- 1 tsp lemon juice
- 1 tsp cornstarch
- 1 tsp cinnamon
- 1/2 cup chopped pecans
- 1/3 cup caramel sauce (plus more for drizzling on top)
For the topping:
- 1 cup flour
- 3 Tbsp brown sugar
- 3 Tbsp white sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3 Tbsp butter
- 4 Tbsp water
- Cinnamon sugar (about 2 tsp sugar mixed with 1/4 tsp cinnamon)

- In a medium mixing bowl whisk together the flour, brown sugar, white sugar, baking powder and salt. Then cut in the butter with a pastry blender or a fork. Pour in the water and then use your hands to form the mixture into a dough.
- Spoon the dough over the apples to cover as best as possible. Sprinkle the cinnamon sugar over the top.
- Bake at 375° F for 35 minutes.
- Drizzle the top with more caramel sauce and serve with a scoop of ice cream.

not a fan. too many apples, insufficient cooking time, cobbler topping gooey and did not brown. lacked flavorr. Will go back to my fave recipe which uses white cake mix as the cobbler toppng and had a wow factor, which this did not.

I made this last night & omgosh, sooooo good & super easy! I made 1/4 recipe, or a single serving in 3 qt. Nutella on top with caramel – I don’t know how that got in there. Crisp Lid in the 3 qt liner removed from pressure cooker to brown. Can’t believe how quick & easy this was, but I should learn by now that’s how Karen rolls. Great recipe to have anytime sweet tooth needs sugar rush! Thanks!

Mealthy Crisp Lid fits 6 or 8 qt. Instant Pot. They were the first company to make air fryer lids for pressure cookers. I’ve had mine for almost 4 years, heavy daily use. It just died – maybe my fault, I unscrewed it to clean the inside a couple months back. Or maybe it just gave out. Mealthy discontinued, but Amazon still has in stock. It held up really well & I just bought another Mealthy. Click on one of the links in Karen’s post above (i.e. instant pot with air fryer lid), then search for the Mealthy Crisp Lid, so Karen will get credit. Be careful, there are several sellers, so look for best price $51.14. I highly recommend Mealthy & it has done a great job for me – a real reliable workhorse. If interested, get it while they still have them. Once gone, no longer made.
Really I think any brand will do, just look for one with lots of good reviews & price. Instant Pot sells their own air fryer lid with pretty cool accessories. Mealthy is the only one I’ve ever personally used. I even use it on my 3 qt Instant Pot inner pot – you have to take it out of the pressure cooker & place the pot on a safe & secure hot pad, then put the crisp lid on top. Any good stainless steel, cast iron, etc. pot will work as long as the crisp lid fits. (No teflon or non-stick pots). But be very careful – the pot gets hot! I hope this helps!

Thanks for leaving the oven temperature and directions for those that don’t have an IP. Is it possible to make this in the slow cooker? I know you have done a few desserts in the slow cooker.
