Instant Pot Caramel Apple Pecan Cobbler

Description

Tart apples, chopped pecans and gooey caramel, topped with a delicious cobbler topping and then drizzled with more caramel. Serve with a scoop of vanilla ice cream for a perfect fall dessert.

For the apple filling:

  • 3 granny smith apples, peeled and sliced
  • 2 Tbsp brown sugar
  • 1 Tbsp white sugar
  • 1 tsp lemon juice
  • 1 tsp cornstarch
  • 1 tsp cinnamon
  • 1/2 cup chopped pecans
  • 1/3 cup caramel sauce (plus more for drizzling on top)

For the topping:

  • 1 cup flour
  • 3 Tbsp brown sugar
  • 3 Tbsp white sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 Tbsp butter
  • 4 Tbsp water
  • Cinnamon sugar (about 2 tsp sugar mixed with 1/4 tsp cinnamon)

Instructions

For the Instant Pot:

  1. In a pot-in-pot dish add the apples, brown sugar, white sugar, lemon juice, cornstarch and cinnamon. Toss well. Sprinkle the pecans on top of the apples. Then drizzle with the caramel sauce. 
  2. In a medium mixing bowl whisk together the flour, brown sugar, white sugar, baking powder and salt. Then cut in the butter with a pastry blender or a fork. Pour in the water and then use your hands to form the mixture into a dough. 
  3. Spoon the dough over the apples to cover as best as possible. Sprinkle the cinnamon sugar over the top. Cover the dish with foil. 
  4. Pour 1 ½ cups water into bottom of Instant Pot. Place the pot-in-pot dish on top of a sling/trivet and lower into the bottom of the Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes. When time is up move valve to venting. Remove the lid.
  5. Remove the foil. Place air fryer lid on top of pot and air fry for 5-6 minutes at 400 degrees until the top is golden brown.
  6. Drizzle the top with more caramel sauce and serve with a scoop of ice cream. 

For the oven:

  1. In a 8×8 inch baking dish add the apples, brown sugar, white sugar, lemon juice, cornstarch and cinnamon. Toss well. Sprinkle the pecans on top of the apples. Then drizzle with the caramel sauce. 
  2. In a medium mixing bowl whisk together the flour, brown sugar, white sugar, baking powder and salt. Then cut in the butter with a pastry blender or a fork. Pour in the water and then use your hands to form the mixture into a dough. 
  3. Spoon the dough over the apples to cover as best as possible. Sprinkle the cinnamon sugar over the top. 
  4. Bake at 375° F for 35 minutes. 
  5. Drizzle the top with more caramel sauce and serve with a scoop of ice cream.
