Incredible Chicken–this easy Instant Pot chicken is made with a only few ingredients. Vinegar, soy sauce, garlic, and spices make a flavorful, tangy-savory sauce that envelopes the chicken.

Incredible Chicken
This incredible chicken is incredibly easy to make and incredibly delicious to eat! I love that you just reduce the vinegar and soy sauce to really deepen the flavor, toss in the chicken and garlic and let the Instant Pot do its thing. The sauce is tangy, savory and so good spooned over rice (I cooked rice in a separate Instant Pot). Greg said the smell alone made him hungry! If you want an easy weeknight win that takes almost no ingredients, try this one out this week.
Ingredients/Substitution Ideas
- White Vinegar
- Low Sodium Soy Sauce–or tamari
- Boneless Skinless Chicken Thighs–or chicken tenderloins
- Garlic Cloves
- Black Pepper
- Ground Ginger
- Bay Leaf
- Crushed Red Pepper Flakes
- Cornstarch (optional)
Steps
Add vinegar and soy sauce into Instant Pot and turn on the sauté setting. Let the mixture boil for 7 minutes to reduce down and intensify in flavor.

Meanwhile, cut the chicken into chunks (I cut each thigh into 4-5 pieces). Add chicken, garlic, pepper, ginger, bay leaf and red pepper into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir the chicken. If you’d like to thicken the sauce you can make a cornstarch slurry by combining 2 Tbsp cornstarch with 2 Tbsp water and stirring until smooth. Stir the mixture into the pot on the sauté setting. Sauce will thicken fairly quickly. Turn off Instant Pot.

Serve chicken and sauce over rice, if desired.

Notes/Tips
- Serve with jasmine rice and steamed broccoli.
- This recipe can be gluten free if you use gluten free soy sauce.
- If you like a little sweetness try adding in a teaspoon or two of brown sugar.
- I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
