Description
This easy Instant Pot chicken is made with a only few ingredients. Vinegar, soy sauce, garlic, and spices make a flavorful, tangy-savory sauce that envelopes the chicken.

- 1/2 cup white vinegar
- 1/2 cup low sodium soy sauce
- 24 oz boneless skinless chicken thighs
- 3 garlic cloves, minced
- 1/2 tsp black pepper
- 1/4 tsp ground ginger
- 1 bay leaf
- Pinch of crushed red pepper flakes
- Cornstarch (optional)
Instructions
- Add vinegar and soy sauce into Instant Pot and turn on the sauté setting. Let the mixture boil for 7 minutes to reduce down and intensify in flavor.
- Meanwhile, cut the chicken into chunks (I cut each thigh into 4-5 pieces). Add chicken, garlic, pepper, ginger, bay leaf and red pepper into the Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Stir the chicken. If you’d like to thicken the sauce you can make a cornstarch slurry by combining 2 Tbsp cornstarch with 2 Tbsp water and stirring until smooth. Stir the mixture into the pot on the sauté setting. Sauce will thicken fairly quickly. Turn off Instant Pot.
- Serve chicken and sauce over rice, if desired.
