Description

This easy Instant Pot chicken is made with a only few ingredients. Vinegar, soy sauce, garlic, and spices make a flavorful, tangy-savory sauce that envelopes the chicken.


Ingredients

  • 1/2 cup white vinegar
  • 1/2 cup low sodium soy sauce
  • 24 oz boneless skinless chicken thighs
  • 3 garlic cloves, minced
  • 1/2 tsp black pepper
  • 1/4 tsp ground ginger
  • 1 bay leaf
  • Pinch of crushed red pepper flakes
  • Cornstarch (optional)

Instructions

  1. Add vinegar and soy sauce into Instant Pot and turn on the sauté setting. Let the mixture boil for 7 minutes to reduce down and intensify in flavor.
  2. Meanwhile, cut the chicken into chunks (I cut each thigh into 4-5 pieces). Add chicken, garlic, pepper, ginger, bay leaf and red pepper into the Instant Pot.
  3. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.
  4. Stir the chicken. If you’d like to thicken the sauce you can make a cornstarch slurry by combining 2 Tbsp cornstarch with 2 Tbsp water and stirring until smooth. Stir the mixture into the pot on the sauté setting. Sauce will thicken fairly quickly. Turn off Instant Pot.
  5. Serve chicken and sauce over rice, if desired.
