Description
Beef and potatoes drizzled with a special sauce. It’s made fast in the Instant Pot.
Ingredients

- 1 pound lean ground beef
- 2 Tbsp dried minced onion
- 1 tsp kosher salt, divided
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 cup beef broth
- 2 medium Russet potatoes, peeled and cut into half inch cubes
- 1 (8 oz) can tomato sauce
- 1 Tbsp yellow mustard
- Optional toppings: shredded cheddar, diced tomatoes, diced pickles
Sauce:
- 2 Tbsp mayo
- 2 Tbsp ketchup
- 2 Tbsp diced dill pickles
- 1 tsp pickle juice
- 1/2 tsp dry minced onion
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. Stir in ½ tsp of salt, pepper and garlic powder.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Dump in the potatoes. Sprinkle the potatoes with the remaining ½ tsp of salt. Dump in the tomato sauce and mustard. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move the valve to venting and remove the lid. Gently stir.
- Combine the sauce ingredients in a small bowl. Stir.
- Scoop a serving of the meat and potatoes onto a plate and drizzle with a bit of the sauce. Top with some shredded cheddar and diced tomatoes and diced pickles. Enjoy!
