Description

Beef and potatoes drizzled with a special sauce. It’s made fast in the Instant Pot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 2 Tbsp dried minced onion
  • 1 tsp kosher salt, divided
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 cup beef broth
  • 2 medium Russet potatoes, peeled and cut into half inch cubes
  • 1 (8 oz) can tomato sauce
  • 1 Tbsp yellow mustard
  • Optional toppings: shredded cheddar, diced tomatoes, diced pickles

Sauce:

  • 2 Tbsp mayo
  • 2 Tbsp ketchup
  • 2 Tbsp diced dill pickles
  • 1 tsp pickle juice
  • 1/2 tsp dry minced onion

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the onion. Brown for about 5 minutes. Drain off excess grease. Stir in ½ tsp of salt, pepper and garlic powder.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Dump in the potatoes. Sprinkle the potatoes with the remaining ½ tsp of salt. Dump in the tomato sauce and mustard. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move the valve to venting and remove the lid. Gently stir.
  5. Combine the sauce ingredients in a small bowl. Stir.
  6. Scoop a serving of the meat and potatoes onto a plate and drizzle with a bit of the sauce. Top with some shredded cheddar and diced tomatoes and diced pickles. Enjoy!
