Hungry Romance Casserole–cavatappi pasta with chicken, ham, swiss cheese and a crispy panko topping. It’s like chicken cordon bleu in a pasta form!

Hungry Romance Casserole

This recipe is adapted from a stove/oven recipe–The Hungry {Romance} Writer: Chicken Cordon Bleu Casserole. I’ve transformed it into an Instant Pot recipe. It’s fast and filling. It will be on the table in under 30 minutes with protein, pasta, and dairy all in one dish. Feel free to add in some spinach or peas for some greens. It has familiar flavors like cheese, chicken, pasta and ham so even picky eaters will love this one!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Cavatappi pasta–or another short cut pasta like penne or macaroni
  • Chicken tenderloins–or chicken thighs/breasts cut into bite size pieces
  • Garlic powder
  • Dehydrated onion flakes
  • Paprika
  • Kosher salt
  • Black pepper
  • Poultry seasoning
  • Dijon mustard
  • Ham cubes
  • Sour cream
  • Swiss cheese
  • Parmesan cheese
  • Panko

Steps

Pour broth into Instant Pot. Sprinkle in the pasta. Place chicken on top of pasta. Sprinkle the chicken with garlic powder, onion, paprika, salt, pepper and poultry seasoning. Add in the dijon.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes. Move valve to venting and remove the lid.

Stir in the ham, sour cream, swiss and parmesan cheese. 

If you have an air fryer lid: sprinkle panko on top and spray it with a bit of cooking spray. Air fry for 4 minutes, or until panko is golden brown. If you don’t have an air fryer lid: heat a dry skillet or one with a small amount of butter or olive oil over medium heat. Add the panko in an even layer and cook, stirring frequently, for about 3 to 5 minutes or until the breadcrumbs turn golden brown and smell toasty. Keep a close eye on them and stir constantly once they start to brown, as they can burn quickly. Once toasted to your liking, sprinkle over the pasta.

Serve and enjoy!

Notes/Tips

  • Serve with a green salad or steamed asparagus.
  • Toast the panko while the pressure is releasing to save time and serve hot.
  • I used my 6 quart Duo Crisp Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 2 cups chicken broth
  • 8 ounces cavatappi pasta
  • 10 ounces chicken tenderloins
  • 1 tsp garlic powder
  • 1 tsp dehydrated onion flakes
  • 1 tsp paprika
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp poultry seasoning
  • 1 Tbsp Dijon mustard
  • 8 ounces ham cubes
  • 1/3 cup sour cream
  • 1 ounce shredded swiss cheese
  • 1/3 cup shredded parmesan cheese
  • 1/3 cup panko

Instructions

  1. Pour broth into Instant Pot. Sprinkle in the pasta. Place chicken on top of pasta. Sprinkle the chicken with garlic powder, onion, paprika, salt, pepper and poultry seasoning. Add in the dijon.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes. Move valve to venting and remove the lid.
  3. Break up the chicken into smaller pieces. Stir in the ham, sour cream, swiss and parmesan cheese. 
  4. If you have an air fryer lid: sprinkle panko on top and spray it with a bit of cooking spray. Air fry for 4 minutes, or until panko is golden brown. If you don’t have an air fryer lid: heat a dry skillet or one with a small amount of butter or olive oil over medium heat.
