Hungry Husband Casserole
Italian sausage is Greg’s favorite. Anything I make with Italian sausage he is down to eat. This is an easy but delightful pasta dish with carrot, spinach, onion, Rotel tomatoes, parmesan cheese and Italian sausage. It’s an all in one pot dish that is perfect for a weeknight meal. Leftovers were great too! The boys took those leftovers down in no time.
Ingredients/Substitution Ideas
- Italian sausage–I used mild
- Onion
- Chicken broth–or beef broth
- Mrs. Miller’s old fashioned egg noodles–I find these in a stand up bag next to other pastas. If you use regular egg noodles only pressure cook for 1 minute
- Italian seasoning
- Garlic powder
- Kosher salt
- Black pepper
- Carrot
- Rotel–I used mild
- Tomato sauce
- Spinach
- Parmesan cheese
Steps
Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion. Brown for 5 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the egg noodles, Italian seasoning, garlic powder, salt and pepper. Dump in the carrot, Rotel and tomato sauce.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in the spinach and parmesan.

Serve and enjoy!

Notes/Tips
- Serve with garlic bread and a green salad.
- I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 8 ounces Mrs. Miller’s old fashioned egg noodles

- 1 (10 oz) can Rotel (I used mild)
- 1 (8 oz) can tomato sauce
- 2 cups chopped spinach
- 1/2 cup shredded parmesan cheese
