Description

Italian sausage with country style egg noodles, spinach and parmesan. An easy Instant Pot recipe.


Ingredients

Scale
  • 1 pound Italian sausage
  • 1 cup diced onion
  • 2 cups chicken broth
  • 8 ounces Mrs. Miller's old fashioned egg noodles
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 carrot, peeled and diced
  • 1 (10 oz) can Rotel (I used mild)
  • 1 (8 oz) can tomato sauce
  • 2 cups chopped spinach
  • 1/2 cup shredded parmesan cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion. Brown for 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the egg noodles, Italian seasoning, garlic powder, salt and pepper. Dump in the carrot, Rotel and tomato sauce.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in the spinach and parmesan. 
  6. Serve and enjoy!
