Crazy Day Soup–a super fast and easy dump and go soup with chicken, tomatoes, vegetables and rice. Make it in the Instant Pot or slow cooker.

Crazy Day Soup

When you have a crazy day on hand but still want to make some dinner try this dump and go soup that only takes about 5 minutes to prep. You can throw it in your Instant Pot or your Crockpot and come back to some delightful veggie chicken soup. You can get creative with the type of vegetables used…peas, corn, green beans, cauliflower, broccoli, okra or edamame will all work!

Ingredients/Substitution Ideas

  • Water
  • Onion soup mix
  • Rotisserie chicken–or cooked, chopped chicken
  • Petite diced tomatoes–or crushed tomatoes, fire roasted tomatoes
  • Converted rice–or long grain white rice
  • Frozen vegetables–I used a broccoli, cauliflower, carrot blend
  • Red wine vinegar–or balsamic
  • Salt and pepper

Steps

Add water, onion soup mix, chicken, tomatoes and rice into Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Meanwhile, cook the veggies according to package directions (I steamed mine in the microwave). Stir the veggies into the pot.

Add in the vinegar. Add salt and pepper to taste.

Ladle into bowls and serve. Top with a bit of parmesan cheese.

Notes/Tips

  • Serve with breadsticks, cornbread, dinners rolls or french bread.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 5 cups water
  • 1 packet onion soup mix
  • 2 cups rotisserie chicken
  • 1 (14.5 oz) can petite diced tomatoes
  • 1/3 cup converted rice
  • 1 (12 oz) package frozen vegetables (I used a broccoli, cauliflower, carrot blend)
  • 1 Tbsp red wine vinegar
  • Salt and pepper

Instructions

Instant Pot Instructions:

  1. Add water, onion soup mix, chicken, tomatoes and rice into Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the soup button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Slow Cooker Instructions:

  1. Add water, onion soup mix, chicken, tomatoes and rice into slow cooker. 
  2. Cover and cook on low for 2 hours. Add in the vegetables and cook for another hour. 
  3. Add in the vinegar. Add salt and pepper to taste. 
  4. Ladle into bowls and serve. Top with a bit of parmesan cheese.
