Serves 6
1 lb 95% lean Gold’n Plump ground chicken, browned
1 (14.5 oz) can Great Northern beans, rinsed and drained (I made mine from scratch)
1 (16 oz) can chicken broth
2 garlic cloves, minced
1 tsp oregano
1/2 tsp salt
1/4 tsp ground red pepper
1 Tbsp lime juice
1 bay leaf
1 (4 oz) can diced green chilies
1 (14.5 oz) can diced tomatoes
2 cups frozen corn
Add chicken, beans, broth, garlic, salt, lime juice, bay leaf, chilies, and tomatoes to slow cooker. Cover and cook on LOW for 5-6 hours. Add in oregano, ground red pepper and corn and stir. Cover and cook for another half hour. Ladle into bowls and serve with cilantro and cheese, if desired.

If you’re looking for healthy recipes this winter. This is a good one. The ground chicken is so lean and the lime juice and red pepper adds a punch to this recipe. I put a dollop of sour cream in mine and it was delish. 4 stars.
With chicken you can never go wrong if you cook it slowly and making it into a soup. Always a fan of chicken!
