Gwen’s Casserole–a creamy and comforting Instant Pot dish featuring tender potatoes, seasoned ground beef and gravy with a sprinkling of cheddar cheese on top.

Gwen’s Casserole
This dinner is like a comforting combination of scalloped potatoes and a beefy, homemade gravy. The Instant Pot cooks the sliced potatoes in just a 2 minute pressure cook time and then the beef and gravy are cooked right in the Instant Pot using the saute setting. It’s all stirred together and totally tasty. I wasn’t so sure if this would be tasty when I glanced at the recipe since it was a very short list of basic ingredients but it was! I think you’ll love it too.

Ingredients/Substitution Ideas
- Russet potatoes–or red potatoes
- Lean ground beef–or ground turkey
- Onion
- Kosher salt
- Black pepper
- Butter
- Flour
- Milk
- Cheddar cheese–I used sharp
Steps
Pour 1 ½ cups water into Instant Pot. Add potatoes into a steamer basket and drop the basket into the pot. Cover and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up perform a quick release by moving the valve to venting and removing the lid. Move steamer basket out of the pot and discard the water.


Turn Instant Pot to saute setting (“more”). When display says hot add in the beef and break it up. Add in the onion, salt and pepper. Cook until cooked through and onions are soft.

Move the meat to the sides of the pot and add in the butter in the middle so it can melt. Sprinkle the flour in the pot and whisk. Slowly add in the milk, whisking as you go. It will thicken as you add it in. Once the sauce has thickened turn off the Instant Pot.

Fold in the potatoes. Sprinkle the cheese on top and let it melt. Serve and enjoy!


Notes/Tips
- Serve with a green salad, steamed vegetables, corn on the cob or a cucumber and tomato salad.
- I used my silicone steamer basket*. Using a steamer basket keeps the potatoes from sitting in the water and getting grainy.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- This recipe can easily be doubled. Keep the same cooking time.
- Can I add vegetables like peas or corn? Yes, add in some frozen peas or corn after you brown the beef and stir for a minute or two before adding in the butter to melt.
- How would I make this gluten free? Substitute a gluten-free all-purpose flour blend in a 1:1 ratio.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
