Mountain Peak Casserole
This recipe is everything you want on a busy weeknight with just a few pantry/fridge staples you probably have at home right now. It’s like a warm hug in a bowl, combining tender red potatoes, sweet corn, and perfectly seasoned ground beef in a rich tomato sauce. Plus, it all comes together in one pot—whether you’re using an Instant Pot for speed or a slow cooker for that low-and-slow magic. Enjoy!

Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Kosher salt
- Black pepper
- Onion powder
- Garlic powder
- Smoked paprika
- Beef broth–or water and Better than Bouillon beef base
- Red potatoes–I like the way red potatoes hold up in the Instant Pot. You can also use peeled russet potatoes.
- Frozen sweet corn–or canned corn
- Tomato sauce
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper, onion powder, garlic powder and smoked paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Dump in the potatoes, corn and tomato sauce.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid.

Stir in the cheese. Salt and pepper to taste. Serve.


Notes/Tips
- Serve with roasted green beans.
- Try sprinkling each serving with extra cheddar cheese.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- Heat a pan over medium high heat. Add in the beef and break it up. Brown for 5 minutes, drain off excess grease. Stir in the salt, pepper, onion powder, garlic powder and smoked paprika. Transfer to the slow cooker.
- Stir in the broth, potatoes, corn and tomato sauce.
- Cover and cook on low for 4 hours or on high for 2 hours.
- Stir in the cheese. Salt and pepper to taste. Serve.

felt like this did not have a lot of flavor so I added taco seasoning. would not make again though
Have not tried this yet. Sounds good though. What about using a jar of spaghetti sauce (your choice of which kind) instead of the tomato sauce? always looking for a way to use potatoes instead of noodles or rice.
