Ground Beef Casserole–an easy Instant Pot dinner with ground beef, macaroni, Rotel tomatoes, and corn in a lightly spiced, cheesy tomato sauce.

Ground Beef Casserole

This was an easy one to make and fun to eat! My friend Ryan was here, so I scooped him up a big bowl and he took it all down. Greg and I polished off the rest, so just a heads up that you might want to double it if you’re feeding more than three or four people! It’s the perfect mix of cheesy, beefy goodness that totally hits the spot. (Recipe adapted from Ground Beef Casserole on Amanda’s Cookin).

Ingredients/Substitution Ideas

  • Lean Ground Beef–or ground turkey
  • Diced Onion–or shallot
  • Montreal Steak Seasoning–or another brand of steak seasoning you love
  • Red Pepper Flakes–or a pinch of cayenne
  • Beef Broth–or chicken broth
  • Elbow Macaroni–or penne
  • Tomato Sauce
  • Rotel
  • Dried Oregano
  • Chili Powder
  • Frozen Corn–or canned corn
  • Shredded Cheddar Cheese–I like sharp

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the Montreal steak seasoning and red pepper flakes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the macaroni. Dump tomato sauce and Rotel evenly over the macaroni. Sprinkle in the oregano and chili powder. Add in the corn.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid. 

Stir in the cheese. Serve and enjoy!

Notes/Tips

  • Serve with green salad, garlic bread, or roasted vegetables.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 8 oz lean ground beef
  • 1/2 cup diced onion
  • 1/2 tsp Montreal steak seasoning
  • 1/8 tsp red pepper flakes
  • 1 cup beef broth
  • 4 oz elbow macaroni
  • 1 (8 oz) can tomato sauce
  • 1 (10 oz) can Rotel
  • 1/2 tsp dried oregano
  • 1 tsp chili powder
  • 1 cup frozen corn
  • 1/2 cup shredded cheddar cheese

    if i substitute ricotta cheese for the cottage cheese, is the amount still the same?

    Both my husband and I enjoyed this. I shall make it again, but might add an half cup of chili sauce. The next day I put the leftovers in a casserole and covered it with shredded cheddar and baked it covered for about half an hour. It was very good. Thanks for another VERY EASY recipé!
